Island Barbecued Pork Ribs

2 slabs of Raw Pork Spare Ribs (4 lbs)
Dry Seasoning:
1 cup Kosher Salt
1 teaspoon Celery Salt
2 Tablespoon Mesquite Seasoning
1 Tablespoon Onion Powder
1 Tablespoon Garlic Powder
3 Tablespoon Sugar
1 teaspoon Ground Black Pepper
Sauce:
1 cup Tomato paste
1 Tablespoon Corn Syrup
1 Tablespoon Molasses
1 Tablespoon Dijon Mustard
2 Tablespoon Honey
1 cup Pineapple Juice
2 Tablespoon Rice Wine Vinegar
1 teaspoon Granulated Garlic
1 Tablespoon Onion Powder
1 Tablespoon Caramel
1/4 teaspoon Smoked Liquid

Barbecue Sauce Preparation:
In a mixing bowl combine all ingredients and mix well. Keep refrigerated.
Preparation:
Mix all dry ingredients and lightly season the pork rib slabs on both sides.
Marinade for 12 hours. Remove seasoning from exterior of ribs before cooking.
Cook seasoned pork ribs at 325°F for 1 hour.
Cut ribs while hot into individual pieces (one bone each) and place in baking dish.
Heat barbecue sauce to a simmer and pour over all the pork ribs.
Cover the dish with aluminum foil and place it in a warm oven at 200° for 30-45 minutes.
Makes 4-6 servings


Island Pulled Pork

1 lb shredded pork
Sauce:

1 cup Tomato paste
1 Tablespoon Corn Syrup
1 Tablespoon Molasses
1 Tablespoon Dijon Mustard
2 Tablespoon Honey
1 cup Pineapple Juice
2 Tablespoon Rice Wine Vinegar
1 teaspoon Granulated Garlic
1 Tablespoon Onion Powder
1 Tablespoon Caramel
1/4 teaspoon Smoked Liquid

Barbecue Sauce Preparation:
In a mixing bowl combine all ingredients and mix well. Keep refrigerated.
Preparation:
Steam shredded pork untill fully cooked.
Mix in bowl with BBQ sauce, add water to thin the BBQ sauce so pork doesn’t dry out.
Cook covered at 350 for 30 minutes.
(We recommend serving on King’s Hawaiian sweet rolls or buns)

Mango BBQ Sauce

4 ounces Mango slices (in syrup)
16 ounces Ketchup
2 ounces Onion
1/8 ounce Cinnamon
¼ ounce Cumin
¼ ounce Garlic
8 ounces Water
2 ounces Sweet chili paste

Barbecue Sauce Preparation:
Sauté onion with cumin, garlic and cinnamon.
Add remaining ingredients and cook until boiling.
Puree well and serve hot.


Peanut Sauce

Ingredients:
2 cloves garlic, peeled
2-inch piece ginger, peeled
1/2 cup peanut butter
1/4 cup each: soy sauce, sugar and water
1/8 cup diced Spanish onion
1 tablespoon chopped peanuts

Peanut Sauce Preparation:
Combine ingredients in pan. Bring to boil while stirring.
Reduce heat and simmer for 10 minutes, stirring occasionally.
Remove from heat, pour in blender. Pulse until smooth.


Beef Teriyaki
A grilled 10 oz sirloin strip with sauce, served with veggies and mashed potatoes.

Sauce:
1 cup low-sodium soy sauce
1 ounce sugar
1/4 cup Sake
1/4 cup Mirin
1/2 teaspoon minced garlic
1/2 teaspoon minced ginger
1/4 cup diced green onion
1/2 cup pineapple juice
1/2 cup cornstarch and water

Teriyaki Sauce Preparation:
Combine and bring all ingredients, except cornstarch to a boil in a saucepan.
Bring to a boil and reduce to a simmer, then stir in the cornstarch and water mixture. Cook for an additional 10 minutes. Strain the sauce through a colander.

Mashed Potatoes

Ingredients:
10 pounds Red potatoes with the skin on
1 pound unsalted butter
1 pound sour cream
1/4 cup salt
1 tablespoon pepper

Preparation:
Boil the potatoes until tender.
Mix all ingredients except potatoes in a mixture. Add the potatoes and mix well.


Scalloped Potatoes​

Ingredients:
1 pound Russet potatoes (washed and sliced)​
1 cup heavy cream​
1/4 cup cheddar cheese​
2 tbsp parmesan cheese​
1/4 cup thinly sliced sweet onions​
1 tsp kosher salt​
1/4 tsp black pepper​

Preparation​:
Combine all ingredients in a greased baking pan.
Bake for 1 hour at 350 degrees. Let stand five minutes before serving.


Macadamia Honey Butter

Ingredients:
2 sticks Salted Butter
2 tablespoons Honey
4-6 Macadamia Nuts

Preparation:
Preheat oven to 350°f.
Chop macadamia nuts in a food processor into small pieces.
Place chopped nuts on a cookie sheet and bake for 6 minutes until they are toasted. Removed nuts from cookie sheet and allow to cool.
Place butter & margarine in mixer and mix until whipped.
Add chopped macadamia nuts and honey and mix until fully incorporated.
Place in a container and serve soft.
Makes ½ lb.

Howdy Cornbread:

Ingredients:
3/4 cup cornmeal
1-1/4 cup sugar
1-1/2 teaspoon salt
1 teapoon baking powder
1-3/4 cup flour
1/2 cup vegetable oil
1 cup milk
2 eggs

Preparation:
1. Mix flour, cornmeal, salt, baking powder and sugar in a mixing bowl
2. In a separate bowl, blend milk, eggs and oil with a mixer
3. Using that same mixer, slowly add the blended liquids to the dry ingredients prepared in step 1, mixing just enough to incorporate the wet and dry ingredients.
4. Grease a 9×13 baking pan with oil or spray with nonstick cooking spray and pour the batter into the pan, spreading evenly.
5. Bake in a preheated oven at 375 degrees for 20-25 minutes or until golden brown.

Tonga Toast

2 or 4 slices sourdough bread, cut 1 to 1 1/2 inches thick
1 banana
1/3 cup sugar
1 teaspoon cinnamon
1 egg
1/4 cup milk
1/2 teaspoon vanilla extract
oil or shortening for frying
whipped butter and/or syrup

Preparation:
Cut a 1-inch pocket in one side of each bread slice.
Cut banana in half crosswise, then split each piece lengthwise.
Remove peel and stuff 2 pieces of fruit in each pocket of bread; set aside.
Mix sugar and cinnamon; set aside.
Mix egg, milk and vanilla extract.

Heat about 4 inches of oil in a pan to 350 degrees F.
Dip stuffed bread in egg/milk mix and soak a few seconds to penetrate bread.
Fry bread on both sides in hot oil until lightly browned, about 3 minutes.
Drain on paper towels or wire rack.
Use cinnamon sugar as desired. Serve with real maple syrup.

Honey Coriander Chicken Wings

1 lb chicken wings (trimmed and cut)

For the wing seasoning:
1 tablespoon kosher salt
1 tablespoon ground paprika
1 tablespoon sugar
1/4 teaspoon pepper
1/4 teaspoon turmeric
1/4 teaspoon cinnamon
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper

For the coriander wing sauce:
1/2 cup honey
1/4 cup low-sodium soy sauce
1 tablespoon cornstarch
1/2 tablespoon chili powder
1/2 tablespoon fresh lime juice
1/2 tablespoon ground coriander
1/4 teaspoon ground ginger

Preparation:
Preheat the oven to 450 degrees.
Mix wing seasoning ingredients in a small bowl.
Put chicken and 2 tablespoons of wing seasoning in a large bowl.
Add oil and coat the chicken evenly. Mix well.
Spread seasoned chicken in a single layer on prepared cooking sheet.
Bake for 20 – 25 minutes or until the thickest part of the chicken reaches 165 degrees.
Place wing sauce ingredients in a large pan, and simmer over medium-low heat.
Cook and stir until thickened. Transfer the cooked wings into the sauce and serve.


Polynesian Luau Chicken

Ingredients:
1 whole chicken ( 2-3 lb)
1 tablespoon poultry seasoning
1 tablespoon black pepper (ground)
3 tablespoons rosemary ( ground)
1 ½ tablespoons garlic powder
1 tablespoon curry powder
2 tablespoons onion powder
1 tablespoon Chinese five spice powder
2 cups sugar
1 cup chicken base
1 ½ tablespoons garlic salt
3 tablespoons fennel ( ground )

Preparation:
Clean and cut chicken into 8 pieces, ( 2 breasts, 2 wings, 2 legs, 2 thighs) .
Combine all ingredients in large mixing bowl,
Season chicken and marinate at least 3 hours or overnight if possible.
Preheat oven to 375ºF.
Place chicken on wire rack in a roasting pan and bake for 20 minutes.
Reduce heat to 250ºF and bake for another 30-40 minutes .
Chicken should be crispy and golden brown.

Buffalo Hot Wings!

Ingredients:
Chicken wings (trimmed and cut)
1 cup all purpose flour
3 eggs
1/3 cup water
1 stick of Butter
1 bottle of Frank’s Red Hot sauce
1/2 tsp garlic powder
1/2 tsp black pepper
1/2 tsp salt
dash(es) Tabasco
dash(es) Worcestershire sauce
Vegetable oil (for frying)
Instructions:
Preheat oven to 325 degrees.
Heat 2″- 3″ of vegetable oil to 400 degrees in heavy pot.
Whisk flour, eggs, 6 oz of Frank’s Red Hot sauce, a couple dashes of Tabasco and Worchestershire sauce, garlic, and black pepper in a large bowl until it makes a batter.
Salt the chicken wings and add them to the bowl, Coat them thoroughly with batter.
Fry the chicken wings in hot oil for 5-7 minutes until cooked golden brown.
Remove the chicken wings from oil and drain on paper towels.
Melt butter in a saucepan on the stove, then add 6 oz of Frank’s Red Hot sauce, a dash of Tabasco and Worcestershire sauce and simmer quickly.
Place chicken wings in oven safe dish (PYREX or a metal pan) and cover them with sauce.
Bake in oven for 15 minutes. Remove and coat with heated sauce again.
Garnish with celery & carrot sticks
Serve with Blue Cheese and Ranch dressing


Gratin de Macaroni

Ingredients:

  • 1 Box or Bag of macaroni noodles
  • Salt
  • Pepper
  • Nutmeg
  • Gruyère cheese (one block)
  • Shredded parmesan cheese (for topping the dish)
  • 4 tablespoons Unsalted butter
  • 1/3 Cup Flour
  • 3 cups Milk

Preparation:

  1. Preheat oven to 400°F.
  2. Boil pasta as directed. Drain, rinse, and set aside.
  3. Heat milk in saucepan until warm.
  4. Melt butter in separate saucepan.
  5. Make a roux: Add flour to melted butter. Stir out any lumps.
  6. Slowly whisk in milk. Add a little at a time and again, stir out any lumps.
  7. Add nutmeg, salt and pepper to taste.
  8. Whisk and cook for about 10 minutes, or until roux has thickened.
  9. Add half of the Gruyère cheese to the roux and stir until melted.
  10. Add more nutmeg, salt and pepper if needed.
  11. Combine cooked macaroni with cheese sauce.
  12. Butter a large baking dish and add macaroni and cheese.
  13. Top dish with remaining Gruyère and parmesan cheese.
  14. Cover dish with foil and bake for 10 minutes.
  15. Remove foil and continue baking until top layer of cheese is melted.

Stuffing!

Bread Pudding

Ingredients:
5 eggs
3 cups whole milk
1/2 tsp salt
1/2 tsp nutmeg
1 1/2 cup sugar
8 cups french bread

Preparation:
1. In bowl mix eggs, milk , salt, sugar and nutmeg. Set aside.
2. Cut bread in medium pieces, place on cookie sheet pan put in 350 degree oven.
3. Bake bread until lightly toasted, about 15 minutes. Remove bread and place in egg and milk mixture.
4. Place mixture in a greased 10-inch cake pan and bake at 325 degree for 1 hour.
5. Let stand 5 minutes, serve hot with ice cream.

Banana Foster Sauce

Ingredients:
4 oz sugar
4 oz brown sugar
4 oz corn syrup
4 oz unsalted butter
1cup heavy cream
1 tsp vanilla extract
1cup spiced rum
1cup banana slices

Preparation:
1. Combine sugar, brown sugar, corn syrup, butter and half of heavy cream in a large pan. Bring to a boil and slowly add remaining heavy cream keeping mixture at a steady boil.
2. Add spiced rum and flambe.
3. Candy will brown slightly; cook 3 minutes until candy forms into a firm ball in cold water. Remove from heat and add vanilla. Add sliced bananas. Serve warm.


Caramel Creme Brulee

Ingredients:
16 ounces Heavy Cream
6 ounces Caramel
5 ounces Egg yolks

Preparation:
1. In a saucepot over the stove, heat the heavy cream and caramel and bring to a simmer. Turn off the heat and add the egg yolks to the heavy cream mix.
2. Wisk until all ingredients are incorporated.
3. Pour 7½ ounces in each ramekin and bake at 250°F for 1 hour and 25 minutes.
4. Chill for at least 2 hours.
5. Top with fresh bananas, sprinkle with sugar and torch.


White Chocolate Bread Pudding
Bread pudding is considered the “apple pie” of South Louisiana. Because of heavy French influence, crusty French bread is available. Just milk and eggs, combined with leftover bread and the addition of white chocolate sweetens up this Southern dessert.

Ingredients:

  • 9 ounces Bakers white chocolate
  • 3 (10-inch) loaves French bread
  • 4 whole eggs
  • 6 egg yolks
  • 4 cups heavy whipping cream
  • 1 cup milk
  • 1 cup sugar

Preparation:
Preheat oven to 300 degrees F.
Slice French bread into 1/2 -inch thick round croutons and set aside.
In a large mixing bowl, combine eggs and egg yolks.
Using a wire whisk, whip until well-blended and set aside.
In a large saucepan, combine whipping cream, milk and sugar.
Bring mixture to a low simmer then add white chocolate.
Using a wire whisk, stir until chocolate is completely melted.
Remove pot from heat and, stirring quickly, add whipped eggs to the cream mixture.
Blend thoroughly to keep eggs from scrambling.
In a 9″ x 13″ baking dish, place bread slices in 2 to 3 layers.
Pour 1/2 of the cream mixture over the bread, allowing it to soak up most of the mixture prior to adding the rest.
Using your fingertips, press the bread gently allowing the cream mixture to be absorbed evenly into the bread.
Pour remaining cream mixture over the bread and repeat process.
Cover dish with aluminum foil and allow to soak a minimum of 5 hours prior to baking.
Bake, covered, for approximately 1 hour then remove foil and bake 45 additional minutes or until top is golden brown.

This bread pudding is actually better if chilled in the refrigerator overnight, after baking, then cut into squares and heated in individual portions in the microwave.

You may wish to create a white chocolate sauce for topping the bread pudding by combining 8 ounces of melted white chocolate and 3 ounces of heavy whipping cream. This may be done in a double boiler or microwave.

PREP TIME: 2 Hours SERVES: 6-8

Dole Whip! (for a single serving)
Ingredients:
1 big scoop of ice cream
4 oz of pineapple juice
2 cups of frozen pineapple

Instructions:
Add all ingredients to a blender until it’s a thick drink.
Add your swirl and then you’re done.

Churros!
Ingredients:
1 cup water
8 tablespoons butter
¼ teaspoon salt
¾ teaspoon ground cinnamon, divided
1 ¼ cups all-purpose flour
3 eggs
1 ½ cups vegetable or canola oil
½ cup sugar

Instructions:
Combine water, butter, salt, and ¼ teaspoon cinnamon in 1 ½-quart saucepan over medium heat. Bring pot to rolling boil.
Reduce heat to low.
Add flour and stir vigorously until mix forms a ball. Remove from heat and let rest for 5-7 min.
Add eggs, one at a time, and stir until combined. Set aside.
Heat oil in medium skillet or 1-quart saucepan over medium-high heat or until temperature reaches 350˚.
Spoon dough into piping bag fitted with large star tip. Pipe 1-inch strip of dough over saucepan, cut with knife, and drop into hot oil. Repeat until churro bites fill saucepan with room to fry.
Fry churro bites until golden brown. Remove with slotted spoon or mesh spider strainer.
Drain churro bites on paper towel.
Mix sugar and ½ teaspoon cinnamon in medium bowl. Toss in churro bites until coated. Place on serving plate and serve with favorite dipping sauce.

It’s a beautiful day in the neighborhood.
They were filming next door again.
Hollywood is in my driveway today.
Ka-ching!


They filmed a “riding lawnmower” commercial with 65 people and staged the Grip and Camera truck, along with the Honeywagon and Craft Service on our street. We met the Location Manager last week and negotiated the use of our driveway for lunch with her.

Lunch for 65 People (with tables, chairs, and shade structures)

Location filming is BIG BUSINESS for the City of Los Angeles and the other cities in the “Studio Zone” aka the “Thirty-Mile Zone”: a 30 mile radius centered at Beverly Blvd and North La Cienega Blvd used by union projects to determine per diem rates and driving distances for crew members and actors. The City of Los Angeles makes a lot of money on Film Permits! There are also requirements for Police, Fire and other City personnel to be employed by productions filming within the city and in public spaces.

NOTE: “Thirty-Mile Zone’ is the namesake of TMZ, the online Hollywood gossip rag.

Shoutout to the hardworking CREW! Shoutout to the Caterers and Craft Service People who keep the Crew fed and hydrated on set (sometimes for 14 hours or more!).
And they also feed the neighbors too when required.

On the Menu: A FREE catered lunch with salmon, chicken & rice, vegetarian lasagna, salad, vegetables, a coke, and 2 sugar cookies for dessert. And a few BONUS trips to the Craft Service table during the day, because they had a pretty good spread.

Happy to be Home!

JOSHWILLTRAVEL! And travel to Las Vegas last week is what we did.*

*well, it wasn’t last week…. more like last month. Tempus fugit!

We were invited (very last minute) to our friend Frank’s 65th Birthday Adventure:
(via a series of text messages)
– Come to Vegas if you want we have extra rooms
– We arrive Wed and lots of different rooms. Party on Saturday
– The party at Topgolf should be good even if you dont golf. Has a private pool for us
– Then we got a big cabana by our pool Friday Saturday and Sunday

So, let me think about it….. and Road Trip to Vegas!
Left the beautiful San Fernando Valley at 1:30am on Thursday morning.
Highways to Las Vegas: 101north-134west-210west-10west-15north
We drove a rental truck, a no-frills silver Nissan Frontier, with unlimited miles.
No traffic! Driving 285 miles at night with the truckers on I-15 north.

“World’s Tallest Thermometer” in Baker, California

Stopped along the way in Baker, California, for gas and to see the “World’s Tallest Thermometer” once again lighting the side of the 15 freeway. It was “non-operational” for many years, but has been repaired and now it is again a beacon at night on the desert highway.
NOTE: Gas prices were “too f*ckin’ high” in Baker!

Arrived at South Point Hotel and Casino before 6am on Thursday.

We have always heard good things about the SouthPoint. People regularly recommend their buffet as being very good. They were also recently featured in the Showtime series “Action” about legal sports gambling, so as we rolled into town we decided to stop there.

Self Parking at SouthPoint is FREE. We parked outside, instead of in the structure, and it was only a short walk to the Casino entrance. We had to go to the High Limit Slots counter to get a Player’s Card because the Club Desk doesn’t open until 7am. We played some blackjack and a little video poker and won a little money.

We also earned 300 club points which entitled us to “spin the wheel” and we won 5000 points (so we cashed them out for $15.00), wandered around the casino, and then headed for their Breakfast Buffet.

NOTE: Get the SouthPoint Player’s Card and the Breakfast Buffet is only $9.95 + tax
(Really nice breakfast buffet for ~$11.00 + $5.00 tip for our server/waitperson)

After breakfast we headed out and drove to the Wyndham Grand Desert Resort near the MGM Grand and across the street from TopGolf at the south end of the strip.

Wyndham Grand Desert Resort

Parked near Tower 3, walked to registration at Tower 2 and Checked In.
Our friends had the rooms reserved and a quick phone call was made, our ID was checked, and we were handed a keycard and welcome instructions. We walked back to Tower 3 and met one of our friends in the lobby. She gave us the “nickel tour” of the resort property and showed us the adult pool and the cabana they had reserved for our party weekend. We walked back to Tower 3 and grabbed our luggage and weekend supplies out of the truck and rode the elevator upstairs.

Okay, something died. rotting trash beyond rotting. it was terrible. really terrible.
FOR THE WHOLE TIME! It was disgusting. It reeked. It stank.
Yes, we complained. And they tried to mitigate the smell with deodorizers and sprays, but they should have called for sanitary cleanup immediately. They were really good about apologizing and they gave our hosts credit for the inconvenience.

The Sweet Suite!
Tower 3, Room 392 at the Wyndham Grand Desert Resort:

Happily, the smell was only in the hallway. Once inside the room, a “lock-out” connecting room, adjacent to the first room our hosts stayed in…. they moved to the Presidential Suite, and her brother moved into their room. More on that later.

Each room had a nice kitchen area, living room space and private bedroom and bath. Mine was a little smaller than the room next door which also had a bar and bar seating in the living room space. I was very happy with the accommodations and also the fact that it was FREE! My hosts were treated to drinks, gifts and other forms of thanks all week long in appreciation for the invitation.

After the little tour of the resort the it was nappy time. Then once we were awake and active again, we joined our friends for a quick visit to the TopGolf mega-entertainment center across the street. We met our friends in the inside bar and had a cocktail while they finished their food (we were still full from the morning buffet).

Our friend’s birthday party was scheduled for Saturday afternoon in the Chairman’s Suite, complete with private pool and lunch buffet, so they went to check it out.  More on that party later……
We wandered around and toured the massive four deck facility. There were lots of bar and seating areas, and a public pool area with lounges, private cabanas and a “swim-up” bar. There were televisions and monitors everywhere, and really big multi-screens by the pool and in the gathering and game areas. And there were a ton of people having fun at midday on Thursday! The Golf Area has private driving areas for rent, with computer monitoring, that tracks your ball and gives you distance, replay, and other fun golf info. And of course there is plenty of food and beverage service available everywhere.
Just mind the warning signs and watch for errant golf balls and clubs!

And then back across the street to the resort.
Our friends moved their stuff to the Presidential Suite with a Private Veranda and we hung out there and waited for them to get settled in.

We made a run to the local market and picked up provision for the week. And then later we went back across the street to TopGolf for a late dinner.

FRIDAY at the Wyndham

Good morning! Cabana Time!

Friday, Saturday and Sunday began the same way each day: Tiki drinks for brunch! And some kind of food from the resort kitchen, along with snacks we brought from the room.

The cabana was equipped with a nice television and a noisy ceiling fan, and the public smoking area was right next door and there was a public cabana in that area. Most of the pool cabanas were positioned in the sun, and must have been really hot inside, while our cabana was on the other side and in the shade set back but facing the adult pool area.

 

Dinner time on Friday, and we had a meeting in the Presidential Suite to decide where to go to eat. There are many choices, so the group reviewed them, and eventually decided to go to Burger Bar (inside the Luxor Hotel, which we didn’t know at the time).

NOTE: Everything we did took a long time to get it together and actually do it. It wasn’t a problem, and we resolved to just ride along and see what happens (most of the time).

And then it started raining. A real Desert Storm! And a wet Friday night.
One of our new friends was the non-drinking designated driver, and he was a cool dude. But his driving was not cool. And it was dark and wet and it took a long time to get there. And then we toured the parking lot, for a long time, before finally parking.

We made our way into the Luxor and found the Burger Bar. Basically a $20 hamburger without anything else, so we decided to go spend our money at The Peppermill instead.

And so, after another wild ride in the rain around Las Vegas, we arrived for Dinner and Drinks at The Peppermill Restaurant and Lounge!

We had dinner and tiki drinks in the restaurant and then went into the lounge and had more drinks. The rain was really coming down and we were in no hurry to leave, so we rode out the storm in the lounge and met some fun new people.

A good time was had by all! We enjoyed our dinner and drinks at The Peppermill. Frank had a big Scorpion drink (in a glass, not a bowl) and the rest of us had a few different drinks from their cocktail menu too.

One more drive around Vegas in the rain and back to the resort. We survived! We returned to the Presidential Suite and then back to our suite in the other tower. We decided to take a hot bath and then sleep in the next day.

Cabana Time! Basically the same routine as Friday: tiki drinks, food, people hanging out and new friends stopping by until it was time to get it together and head over to TopGolf for the big shindig!

The party was a lot of fun, we got out drink on, and there was too much food! We ended up taking a lot of it back to the resort afterwards. There was golfing (unlimited balls, or something like that) and swimming too. The pictures are just a sample before it got crazy wild.

And so we returned to the resort and hung out until it got dark. We decided our next destination would be (more) Tropical Cocktails at Frankie’s Tiki Room!

After the wild road trip on Friday night, we decided we would drive to Frankie’s and meet the crew there. We cruised past The Strip and downtown to the bar.

We enjoyed a Mai Tai and then there was a lot of conversation and more drinks. We moved around from our table in the cabana to a seat at the bar. Lots of kitsch and weird decor to see, even in the dark. Eventually, they decided to return to the resort and we decided to go back to The Strip and have some Las Vegas fun.

The Wynn is a beautiful property! And it was crowded, which was nice. We played a little and wandered around taking in the different areas of the casino and environs. We had some luck and cashed out and drove back to the resort and went to bed.

SUNDAY (Mother’s Day) morning after waking up and getting ready, we walked over to the Presidential Suite for Breakfast/Brunch and more Cabana Time! It was a leisurely day of drinking and hanging out. There may have been an afternoon nap involved.

So we were volunteered to cook and we grilled some steaks for dinner at 9:30pm on Sunday at the community BBQ Grills. There’s a curfew for cooking at 10pm, so we had to be quick! We took them upstairs and enjoyed a great meal on the private veranda (and of course, there were more cocktails).

Then we went on a mission to The “Welcome to Fabulous Las Vegas Nevada” Sign!
It was designed by Nevada-born graphic designer Betty Willis (1923-2015) in 1959.

“The rounded diamond shape of the sign was inspired by the Goodyear logo and the idea for the starburst came from the one in Disneyland’s emblem, which to her meant a happy destination. The seven silver dollars were a symbol of good luck for visitors entering the world’s gambling capital. (Betty) Willis’s design was never trademarked.”

The sign was built by a small local company Western Electric Displays Inc, aka Western Neon. Western Neon was bought by YESCO (Young Electric Sign Company) and they have maintained the sign ever since. The original sign has been rebuilt, restored, and recognized as a cultural and historic landmark for the City of Las Vegas over the years.

Safe and legal public access to the sign was finally made possible in 2008, when parking spaces and a pedestrian walkway were finally constructed. Clark County and the Nevada State Historic Preservation Office had the sign listed on the National Register of Historic Places in 2009.

NOTE: It was “Helldorado Days” a big holiday in the State of Nevada. There was a parade on Saturday and the Rodeo and other events were happening all weekend in downtown Las Vegas and on Fremont Street. So, we didn’t go there.

Old Vegas! Glitter Gulch!

We returned to the resort and stayed up until MONDAY morning!
“It’s HOT in the Hot Tub!” 
And sometime before dawn we hit the Jacuzzi and Pool! (the pool and jacuzzi at Tower 3 are open 24 hours) It was very Early AM, at Tower 3, after it was cleaned, before the crowd and we were almost alone.

We had stayed up all night and after our adventures we finally decided to try out the 24 hour pool and jacuzzi in our Tower. The pool area was empty except for one couple, so we waited until they were out of the water and then we moved in. We spent about a half hour enjoying the warm, bubbly spa, and swam in the cool pool until the calm was interrupted by two small children and their mother….. as we left the pool area at 6am the mother was screaming at the children in the shallow end of the pool, “Get over here dammit, you pulled this sh*t all yesterday, I’m not gonna have it today!”

Went up to the room and took a hot shower, ate some leftover tacos, and went to bed.
Requested and was given a late checkout time of 12 noon via the telephone.

And then,
Housekeeping knocked on my door three different times between 9:30 and 11am!
AND THERE WAS A “DO NOT DISTURB” SIGN HANGING ON THE DOOR HANDLE!
They also started cleaning the other half of the “lockout suite” and made noise like they were doing construction next door, making it impossible to sleep.

NOTE: We complained and Dan, the resort manager, gave us a $50 credit to use at our choice of restaurants “off-property” at a Caesars Hotel (there was a list of restaurants to choose from at each hotel) for our inconvenience and also took care of our friends who invited us. That’s real good hospitality!

Checked out of the Wyndham and drove back over to the Wynn. FREE Self Parking again.

We walked to the Palazzo and Venetian, then went outside, crossed Las Vegas Blvd and went over to the Mirage. It was a beautiful day, but it was too hot of course.

We visited the MLife desk, and asked about a MyVegas room rate. They offered us a Monday night room for $63.00 + taxes and the ridiculous resort fee, so we passed.

We walked through the Forum Shops to Caesars Palace and enjoyed the weirdness!

Caesars Palace Hotel and Casino was once the best place to stay and play in Las Vegas. Then they turned it into “Disneyland”, and they threw away all the class and quality that made it great. And then they added RESORT FEES and PAID PARKING.

We went to Bobby Flay’s Mesa Grill and got a seat a the bar, but when we looked at the menu there was nothing that we wanted to order…. so we thanked them and left. We wandered around Caesars enjoying the sights while trying to decide where to eat.

Then we decided on dinner at Rao’s Italian Kitchen, Las Vegas at Caesars Palace!

On The Menu: Good bread, an excellent Caesar salad and their tasty meat lasagna.
We ate the salad and half of the lasagna and bread, and had the other half packed “to go”.
No drinks or wine because we were driving later, so only ice water with dinner.

It was getting dark after dinner, so we started walking back, watched the sunset behind Caesars Palace across the street, and then stopped at Harrah’s and the old Casino Royale on The Strip.

And then we walked back to the Wynn. We enjoyed our after dinner walk at night and took in the sights along The Strip on our way back. We returned to our car and hit the road. Destination: Los Angeles.

Stopped at the new Mega-Gas Station Terrible’s Road House on the way back to California and filled up the gas tank and emptied mine. They have 100 pumps for “rush hour”, but the place was almost empty when we stopped in around 10pm on Monday night.

It was a quick stop, with lots of light and easy highway access. After getting gas, we took some pics and then got back in the rental truck and made a non-stop, no traffic, night drive back to Los Angeles. Home again before 2am. Had a really fun trip!

On Ventura Blvd, Sunday street parking is FREE. The restaurant has a parking lot and they validate, so parking is pretty easy.

Black and red lacquer design (is that traditional?) with lots of cool gold accents. There is a long bar area with a cool aquarium attached to the large dining room. Table and booth seating is available. For the Dim Sum Brunch there was a steam cart circulating and a big menu with lots of other choices available for “made to order” plates.

The spicy chicken wings were our favorite thing, and the soup dumplings were nice and juicy! We ordered a lot of food, tried tastes of many dishes, and it was good, but not great. So, if you don’t want to make a trip to Chinatown or Alhambra for serious foodie Dim Sum, this is an option in the San Fernando Valley.

The Black Bear Diner in Tarzana, California

We were tired, hungry and driving down Ventura Boulevard last week, when much to our surprise and amazement, there was a Black Bear Diner in Tarzana!

Located in the space previously occupied by CoCo’s, Season’s and Bob’s Big Boy in Tarzana Square on Ventura Blvd just east of Reseda Blvd, we have a Black Bear Diner!

We are a big fan of the Black Bear Diner and enjoy eating at the restaurant in Medford, Oregon when we are visiting in Ashland. They are located in California, Oregon, Washington, Arizona, Colorado, Nevada, Utah, Idaho, and there’s also one in Midwest City, Oklahoma. They are currently adding new locations and will soon be opening in Katy, Texas (according to their website).

We were so happy to see a Black Bear Dinner in the Valley and to have an easy decision on where to eat dinner. We pulled right into the parking lot and started taking pictures for this Blog Post. It was late and after the dinner rush and not very crowded at all. There were people at about 40% of the tables and they were mostly finishing up. The counter was empty and we chose to sit at a table at the back of the main dining room where it was quiet and there wasn’t any waiter traffic.

We were seated immediately by a young host/cashier and greeted promptly by our waitress (or female server if you’re particular about the job title). When we asked how long they had been open they told us almost three weeks. Our waitress had worked at the previous restaurant CoCo’s in the same location, which had closed long ago.

Everything was new and “fresh” with the familiar decor that is part of their brand and a constant throughout the chain. A large WELCOME sign and statues of Black Bears greet you out front and there’s a beautiful vintage-style jukebox available in the lobby for patrons to play classic American music of their choosing. They have a merchandise display and food products available for sale at the register too.

The board-of-fare is All-American “stick to your ribs” Food, and it’s breakfast, lunch and dinner all day. We decided to keep it simple and test the American cheeseburger basket.

As you can see, the burger and cheese were presented on the basket, not on the paper, which may sound particular (and it is) but it’s important for some customers (like us). We ordered it with lettuce only, but there was no lettuce on the burger and we didn’t want to wait for a server to come, get the lettuce and then bring it back, before eating….

The cheeseburger was fine, but not great and a little bland. The fries were great and served very hot. We only had water to drink and ate the food quickly because we were really hungry. We finished and paid at the register and we were happy and no longer hungry. The service was fast and aside from the food presentation and missing lettuce everything was fine and we will return again.

NOTE: Our waitress left after putting the order in and bringing us barbecue sauce and mustard, and another server brought us our food, but the lettuce was ordered and missing from the meal.

We didn’t have dessert, but they do have a great dessert menu (with pics):

NOTE: BLOG IS STILL UNDER CONSTRUCTION! This Blog post isn’t finished… but we have to publish because we aren’t sure if wordpress is saving it and it’s 3:15am.

Forget Football, let’s have Sunday Brunch! Okay, so we watched the morning games and then hit the road after 1pm. The Jacksonville Jaguars had just tied the Los Angeles Chargers at the end of the fourth quarter and were headed for overtime, and we had to leave because we had “a long way to go and a short time to get there” with unknown traffic before arriving at lunch…

405 Freeway south to Manhattan Beach

It was cloudy, overcast and there was a lot of traffic, but it wasn’t as bad as it could have been. We made pretty good time, past the 101/405 intersection and up the hill, past West L.A., past the 405/10 intersection and LAX, past Venice and Marina del Rey, and down to the Manhattan Beach Blvd exit. And of course, Manhattan Beach Blvd was all torn up and under construction and only one lane, so the delay made us late. We got lucky and found metered parking in front of the restaurant, so we were only 15 minutes late.

On The Menu: Cornbread biscuits with bacon & cheese, honey fried chicken with slaw, pork tacos, broccoliflower, burrata sandwich, lamb gyro, pickles & olives, fries, orange juice, a “Blood & Smoke” bloody mary and chocolate pudding with peanut butter mousse, bacon bits and banana for dessert!

Bad traffic on the 405 going north on the way home, so we got off and took Sepulveda Blvd through West L.A. to Mulholland over the hill to the San Fernando Valley.

 

And Jacksonville beat the L.A. Chargers 20-17 in overtime!
But then the Broncos lost the Sunday night game to the Patriots…..

Fabrocini’s Italian Kitchen in Tarzana, CA

We were just going to go to CPK (California Pizza Kitchen) but the parking lot was full, which indicated the restaurant would be crowded and busy, so we detoured to Fabrocini’s Italian Kitchen just two blocks away on Ventura Blvd (near Reseda Blvd) in Tarzana and we were glad that we did.

We really like this restaurant! We’ve been here before and it’s always really good. Good food, good service, good atmosphere and pretty good prices. They have free parking in the rear and there is ample metered street parking (8am-8pm everyday except Sunday).

We arrived without a reservation and were seated immediately. The dining room was busy and there were several large family parties, but unlike CPK, the noise was not a factor at all. It’s not a very big place occupying two store front windows, with the open kitchen on one side and the dining room on the other. They do good business (lunch, dinner, catering and delivery), and they also have beer & wine on premises.

There are pictures of all things Italian on the walls and the Dodgers game was on the television in the dining room (as reflected on the pic below).

NOTE: We are still boycotting the Dodgers and Time-Warner/Spectrum/SportsNetLA (see the previous Blog) but it was on and we didn’t pay attention because we currently don’t care about Major League Baseball until we can watch the Dodgers games on television FOR FREE.

On The Menu: Caesar salad, fresh baked bread with olive oil, pasta fusilli with broccoli in a garlic sauce (a little too salty tonight), meat lasagna and a coke.

A GOOD dinner!  The service (waitstaff & busboy) was excellent and the management strives to make sure everything is beyond satisfactory. We should add that although our intention was to eat at CPK, the experience at Fabrocini’s was much better! We still like CPK, but the difference in the quality of food, service and care between a family owned restaurant and a huge corporate chain is exemplified in this comparison. And we should also mention, the cost wasn’t very different and there wasn’t a “loyalty club” discount involved, so we didn’t have to show them our phone or give them a code.

NOTE: Don’t fill up on bread and salad or appetizers, because the entrees are large and delicious! They also have good desserts but we didn’t indulge this time.
