Professional Cooking Tips! (ripped from the Interweb)

And so, here are some great professional cooking tips and tricks
that we have collected from the interweb. We love to cook!
NOTE: We learned at an early age. We had a cooking class in junior high.
We chose apartment-style living at UCSC (with a kitchen so we
could cook for ourself) instead of dormitory living and “dining-hall” food.
We are not a professional chef, but some of our cooking is pro quality.

ALWAYS WASH YOUR HANDS! (and wash them frequently while cooking)
CLEAN AND SANITIZE YOURSELF, YOUR KITCHEN, AND YOUR FOOD!
Learn about kitchen safety/sanitation and safe food storage and preparation.

Drink Coffee. Drink Water. (stay awake and alert, and always stay well hydrated)

Prevent the cutting board from slipping – place a wet paper towel underneath it.

ALWAYS USE A SHARP KNIFE!
Sharpen your knives before, clean your knives after.
Use a vegetable peeler for ultra-thin cuts and shaving.
Learn how to hold the knife properly!
Learn the proper knife technique for the type of food you are cutting!
(and there are great YouTube vids on “how to” cut up everything)

Heat your pans before cooking (so they are already HOT).
Preheat your oven for 20 minutes at temperature before cooking and baking.
Constant heat and proper temperature are necessary for professional cooking.

Baker’s Tip: Put a bowl of water inside the oven when baking.
The steam will help make a nice crispy bread crust.

Use eggs and butter at room temperature when making dough.
Take the eggs and butter out of the fridge the night before.

Caramelized sugar for baking.
Slightly frying the sugar will add a note of caramel to baked goods.
Heat sugar for one hour for a hint of caramel flavor,
or heat for up to five hours to create a deep and unique aroma and taste.

Try to eat healthy, well-balanced meals.
Add healthy fats, cut sodium, bump up your fiber,
and aim for a variety of colors on your plate.
(but never sacrifice good food for a bad “diet”)

Cook your aromatics first. 
Cook onions with salt. Add salt to reduce the smell. It will also cook them faster.
Add onions while the food is cooking.
Onions need time to develop their sweet flavor profile,
so they are one of the first ingredients to add to the pan.
NOTE: Garlic burns easily and the taste will turn bitter, so don’t add it early.

Know when to add the herbs. 
Add dried herbs while cooking to enable the flavor to infuse the dish.
Fresh herbs should be added after the food is done cooking.
Fresh herbs will turn bitter if overcooked.

Use both salt and acid when seasoning.
Add the salt to your dish while you cook,
not before (and taste frequently) to avoid over-salting.
Use sugar as a seasoning.
It counteracts sour taste and will add a pleasant and rich flavor.

Add a dash of high-quality extra virgin olive oil to enhance your dish.
But don’t use olive oil in everything. Use pure vegetable oil for cooking.
Olive oil burns easily! It is not good for high-temp cooking and frying.

Brine your Meat! Brining makes for juicy meat.
Create a juicy texture and infuse rich flavor, and minimize
the chance of the meat drying out or being overcooked.

Marinate meat or fish in a plastic bag.
This ensures the meat or fish is coated evenly.
(also makes for an easy cleanup)

Cook steaks that are at room temperature and they will cook more evenly.
And not all cuts of meat take the same time to cook!
For quick cooking, choose tenderloins and steaks.
For longer and slower cooking, use a roast, brisket, or shoulder cut.

Cook steak without oil by placing it on its side when cooking.
Cooking meat on the side renders the fat and will add more flavor.
It will also create a nice crust for the edges.

Make burgers juicy by placing ice cubes in the middle of the patties.
Right before grilling, press a small piece of ice into the center of patty.
This prevents it from drying out while cooking.

Heat the saute pan to a high temperature before searing meat or fish.
Pre-heat your pan and Don’t crowd the food when searing.
High heat is needed for perfectly seared meat and fish.
Do not to crowd the pan because it will lose the high cooking heat.
Place fish in pan with the skin side down first.
The high temp will quickly sear the skin and prevent it from sticking.

Use mayonnaise on fish to get a nice tasty crust.
Paint a small amount of mayo onto the fish with a pastry brush
and then season with salt before grilling. This will make a nice golden crust.

Make scrambled eggs creamy by adding mayonnaise.
Just add a teaspoon of mayo, it won’t change the flavor of the eggs.

Use sour cream to make great pancakes.
Add 2 tablespoons of sour cream to the pancake mix.
It will make the pancakes tasty and fluffy.

Peel hard boiled eggs fast and easy!
Just add a little baking soda before you boil them.
You can also use vinegar.
Both ingredients get inside the eggshell, and will make them peel faster.

Use a large frying pan instead of a big pot when cooking pasta.
The wider area of the pan will heat the water faster.
Pick the right size pan for the amount of pasta being cooked.
Add a little olive oil and salt the pasta to taste after the water is boiling.
The salt will season the pasta.
The oil prevents the pasta from sticking and adds flavor.
Cook pasta in the sauce to finish.
The sauce will coat the noodles and they will absorb the flavor.
If the sauce is too thick, just add a little pasta water to create the thickness desired.

Dry boil potatoes before mashing.
After boiling, remove potatoes from water and place in a clean heated pan.
Make sure they don’t cook anymore. Once dry, mash them.

Make Roasted Garlic in the microwave.
Place a whole bulb of garlic in a small bowl with a little oil and water.
Wrap the bowl in plastic wrap before microwaving. Cook until the garlic is soft.

To cook a perfect egg, you will only need three things: 
a thick-wall frying pan, a 1/2 tablespoon of butter, and an egg.
Cook for 4-5 minutes over a low heat. Don’t forget to add a pinch of salt.
Remember, eggs will continue to cook after being removed from the pan!

TIP: Use an egg slicer to cut and slice fruits.

Mullah’s Chai Recipe!

Ingredients:
Black Tea
Fresh Cardamom
Fresh Ginger (grated or sliced)
Fresh Mint
Honey (optional)
Milk/Cream (optional)
Lemon (optional)
Sugar (optional)

Directions:
In first pot, boil fresh cardamom and sliced fresh ginger for a few minutes.
Drain the seasoned hot water into large teapot.
In a second pot, boil water, remove from flame,
Steep black tea and mint for 3 minutes.
Combine in teapot, serve, and finish off with honey and milk or cream.
Lemon and sugar are optional. Enjoy it!

How to Butcher a Kangaroo:

Fried Rice with Minced Beef

Ingredients:
1/2 pound minced beef
iceberg lettuce, shredded
2 eggs, lightly beaten
2 spring onions, finely chopped
2 bowls white rice, preferably leftover and reheated
2 tsp light soy sauce
salt, to taste
sugar, to taste

Marinade:
1 Tbsp light soy sauce
1 tsp cornflour
1/4 tsp chicken powder
2/3 tsp sugar
1 tsp water
1/2 tsp vegetable oil
1/2 tsp shaoxing wine
a pinch of pepper

Method:
Marinate minced beef with marinade for 15 minutes.
Heat oil over medium. Cook beef until 80% done. Set aside.
Add some oil again. Stir in beaten egg. Stir constantly until 60% done. Add rice, preferably reheated beforehand as it’d shorter the cooking time. Quickly stir fry evenly. Sprinkle salt and sugar to taste. When the rice is really hot thoroughly, add light soy sauce.
Toss in beef. Continue to cook and combine well. Add shredded lettuce and spring onion until softens. If you’d like to taste the crunchy veggie, then don’t fry too long. Serve hot.

Combination Fried Rice:
First, when it comes to fry rice, we have to use leftover rice because you don’t want any soggy rice. Mixing with all the other vegetables and meat, the rice would be just right, not so dry or soggy.
Second, use as many favorite ingredients as you like. There’s no only one rule to combine ingredients for fried rice. So, be creative and enjoy whatever you like.
Third, the right order is to pan fry eggs, then followed by rice. Many people make the mistake to put in rice first, then pour in whisked eggs. This would make the rice soggy and mushy by absorbing the egg mixture.
Last but not least, don’t stir fry all ingredients with rice in the first place.You have to sauté the meat and vegetables separately. Then combine with the fried rice when it’s nearly done. Simple and easy

Ingredients :
3 bowls leftover rice
1 onion
1 sausage (I used Continental Frankfurt this time)
1 slice ham
6 mushrooms
1/2 cup green peas
3 eggs, whisked

Seasoning:
1 tablespoon light soy sauce
A pinch of black pepper, to your taste
salt, to your taste
sugar, to your taste

Method:
Blanch green peas in boiling water for 2 to 3 minutes. Drain and set aside.
Cut onion, sausage and ham into small cubes. Slice mushrooms.
Heat 2 tablespoons of cooking oil and sauté onion on medium-heat pan, add in mushrooms until tender. Put in green peas and sauté for 2 minutes. Set aside.
Heat pan on medium heat, sauté sausage and ham until light brown. Dish up.
Clean the pan with a piece of kitchen towel. Add 2 tablespoons of oil, pour in whisked eggs. When the egg mixture is half-way cooked through, add in leftover rice. Stir well for about 10 minutes on high heat. When all rice is evenly heated up and mixed well with the eggs, add in onion, green peas and mix well. At last, add the sausage and ham. While stirring all ingredients together, generously sprinkle salt, sugar and black pepper. Drizzle the soy sauce all around the rice and toss. Taste it by yourself. When you’re satisfied, it’s done.

Tips:
You can use whatever greens you like, for example capsicum, celery. Other meat, like chicken, shrimp, beef or BBQ pork can be good choice too.
If you preheat the chilled leftover rice in a microwave beforehand, it would shorten the cooking time. Save your energy~

Thanksgiving 2015 – Baking (the night before)


Soft Oatmeal Cookies – Makes 2 dozen

Prep Time:15 minutes (then chill dough for at least one hour)
Bake Time 10 minutes
Total Time: ~2 hours
Ingredients:
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour 
1 teaspoon baking soda
1 teaspoon salt
1 ½ teaspoons ground cinnamon
3 cups quick cooking oats
Option: add a cup of raisins or nuts

Directions:
In a medium bowl, cream together butter, white sugar, and brown sugar.
Beat in eggs one at a time, then stir in vanilla.
Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture.
Mix in oats. Cover, and chill dough for at least one hour.
Preheat oven to 375 degrees F
Grease the cookie sheets with vegetable oil or shortening
Roll the dough into 1″ balls, and place 2 inches apart on cookie sheets.
Flatten each cookie with a fork dipped in sugar.
Bake for 8 to 10 minutes.
Allow cookies to cool on baking sheet for 5 minutes
before transferring to a wire rack to cool completely.

Sugar Cookies!

Ingredients:
2 ¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
1 cup butter, softened
1 ½ cups white sugar
1 egg
1 teaspoon vanilla extract

Directions:
Preheat oven to 375 degrees F.
In a small bowl, mix flour, baking soda, and baking powder. Set aside.
In a large bowl, cream the butter and sugar until smooth. Beat in the egg and vanilla.
Add the dry ingredients (flour, baking soda, and baking powder) and mix well.
Roll dough into teaspoon sized balls, and place them on ungreased cookie sheets.
Bake 8 to 10 minutes (or until golden).
Let stand two minutes before moving the cookies to a wire rack to cool.
Decorate with candies or icing or crystalline sugar if desired.

Candied Orange Peel
Strips of orange peel cooked in sugar syrup until they are soft and chewy.
They can be sugar coated or dipped in chocolate for extra fun.

Ingredients:
3 Oranges – navel or Valencia
2-1/4 Cups Sugar (granulated)
1-1/8 Water
Sugar for coating and/or Chocolate for dipping (optional)

Directions:
Prep and Blanche the Peel:
Rinse  and clean three navel or Valencia oranges.
Cut the top and bottom off each orange. Score the skin into quarters.
Remove the skin (both peel and pith). Cut into strips about ¼” wide.
(eat or save the peeled oranges for other use)
In a medium saucepan, place the strips of peel and cover with cold water.
Blanch the peels: Bring the water to a boil. When the water boils, drain the water from the orange peel strips. Rinse in fresh cold water. Repeat at least two more times.
Blanching removes any bitter flavor in the orange peel. (TIP: Blanch the peels 4-5 times).
Drain the water and place the peels in a bowl.

Sugar Syrup:
Use the same saucepan, and whisk together 2-¼ cups sugar and 1-⅛ cups water.
Bring the mixture to a simmer over a low heat.
Cook 8-9 minutes at a constant simmer, adjust the heat, and make sure it doesn’t boil.
Add the orange peel. Cook about 45 minutes to 1 hour on medium-low heat, until the white pith is translucent (not white), adjust heat as needed – maintain the simmer, keep from boiling.
Swirl the pan occasionally to make sure that all of the peels get covered with syrup.
DO NOT STIR, this will cause crystallation.
Drain the cooked syrup from the orange peels – (set aside and save for another recipe).
Toss the peels in a bowl of sugar to coat, or dip in melted chocolate and let set. (optional),
Transfer to a drying rack. When they are dry, store them in an airtight container.

White Chocolate Lemon Truffles

Easy Chocolate Truffles

Ingredients:
1 can of Sweetened Condensed Milk (8 oz)
1/2 cup Cocoa Powder
Cocoa Powder for dusting
(optional: add powdered sugar to cocoa powder for dusting)

Directions:
Warm the condensed milk in saucepan over low heat
(WARNING: it will burn if the heat is too high)
Remove from heat and add cocoa powder (sift to remove clumps)
Mix well until firm (like frosting)
Place in a plastic wrap lined pan, cover, and form into desired thickness
Refrigerate for 2-3 hours (wrapped in plastic wrap)
Spread cocoa powder on cutting board
Place unwrapped chocolate on cocoa powder
Dust the top with cocoa powder
Cut into squares, and round the edges (or form them into shapes)
Finish with cocoa powder and serve

Easy Chocolate Fudge

Ingredients:
1 can of Sweetened Condensed Milk (8 oz)
1 bag of Chocolate Chips
(substitute semi-sweet, milk chocolate, or white chocolate chips as desired)
(optional: add chips, nuts, caramel, peanut butter, marshmallows, other flavors
and spices – mint, cayenne, etc., or candy – M&Ms or cut up candy bars as desired)

Directions:
Melt the Chocolate Chips in a double boiler over low heat
Add the Sweetened Condensed Milk and mix well
(WARNING: it will burn if the heat is too high)
Remove from heat
(add additional ingredients as desired and mix well)
Pour into a tin-foil pan or plastic wrap lined dish and refrigerate until solid
Cut into squares and serve


“Jailhouse Pie”
(from Lifetime’s “Cellmate Secrets”)

Ingredients:
Non-dairy powdered creamer
Packet of Kool-Aid (choose your flavor)
Oreo Cookies or other filled sandwich cookie
(use the center filling in the pie mix, save the cookie pieces for the crust)
Sprite or 7-Up (or any other liquid beverage that pairs with the Kool-Aid)

Directions:
Combine creamer, Kool-Aid, and cookie filling in a large bowl
Add liquid in small amounts and mix well until viscous
Pour into small bowls, lined with the sides with the cookie pieces
Refrigerate until firm and serve
(Optional: Top with whipped cream or Cool Whip)


Frozen Banana with Chocolate Sauce
(so simple, and so good)

Ingredients:
Banana (frozen)
Chocolate Sauce

Directions:
Remove frozen banana from the freezer, let thaw 15 mins
Peel the banana (you may have to use a knife to remove it all)
Slice frozen banana into 1″ thick pieces and place in small bowl
Top with chocolate sauce and serve immediately

NOTE: Bananas should be put in the freezer just as they ripen,
for best dessert results. Even a banana that is a little green is okay.
(freeze a number 5-9 banana on the picture chart)

Tip: To prevent bananas from turning brown too fast,
wrap a piece of tinfoil around the top of the bunch.


S’mores, S’Mores in a Cone, and “The Cookie Monster”
(you don’t have to just use graham crackers for a great dessert!)

Ingredients:
Chocolate (Hershey milk chocolate bars)
Graham Crackers – two pieces, top and bottom
Marshmallows (large puffed)

Directions:
Place chocolate on bottom piece of graham cracker (open face)
Roast marshmallow over open flame until warm/hot
Place marshmallow on top of chocolate
Sandwich with the top piece of graham cracker and serve

The alarm next door was going off for about 15 minutes,
There was another loud explosion just before midnight.
Now all is quiet. But random fireworks can still be heard farther away.
LAPD is busy working street racers taking over intersections,
a kidnapping, persons with guns, persons with green lasers,
and the usual robberies, assaults, and other crimes.
AND THEY ARE GOING TO ARREST THE GUY WITH THE GREEN LASER!

5:00am: And we are awake again. Had a sinus thing, woke us up, can’t sleep.
We took the dog outside and into the kitchen. We ate a strawberry.

8:00am: We played with the little dog. We took the dogs outside. We fed the dogs.
We took the dogs outside. We made an iced espresso.

12:55pm: We went back to bed with the dog and woke up at 12:30pm.
We took the dog outside. And now we are wide awake…. yah, right.

On The Menu: Breakfast for lunch: 2 eggs over medium, bacon,

4:20pm: We’ve been chillin’ with the dog, because it’s 100 degrees out.
We took the dogs outside. The newspapers and mail were collected .
We drank another iced espresso.

We talked to the staff (our friends) at the restaurant and drove home.
We ate dinner while watching LIVE MUSIC on the desktop.

There was a pursuit that ended when the guy hit the barrier between the carpool lane and the freeway head-on at high speed. He destroyed the truck in a spectacular wreck, spun out, rolled it, and landed in the carpool lanes. Then he crawled out of the wreckage (unhurt) and surrendered to the Highway Patrol. Yeah Saturday Night!

NATIONAL PTSD AWARENESS DAY – Post Traumatic Stress Disorder is real!

POST TRAUMATIC STRESS DISORDER
Formal diagnostic criteria for PTSD:

Criterion A
You were exposed to one or more event(s) that involved death or threatened death, actual or threatened serious injury, or threatened sexual violation. In addition, these events were experienced in one or more of the following ways:

  • Directly experiencing the event
  • Witnessing the event as it occurred to someone else
  • You learned about an event where a close relative or friend experienced an actual or threatened violent or accidental death
  • Experiencing repeated exposure to distressing details of an event, such as a police officer repeatedly hearing details about child sexual abuse

Criterion B
You experience at least one of the following intrusive symptoms associated with the traumatic event:

  • Unexpected or expected reoccurring, involuntary, and intrusive upsetting memories of the traumatic event
  • Repeated upsetting dreams where the content of the dreams is related to the traumatic event
  • The experience of some type of dissociation (for example, flashbacks) where you feel as though the traumatic event is happening again
  • Strong and persistent distress upon exposure to cues that are either inside or outside of your body that is connected to your traumatic event
  • Strong bodily reactions (for example, increased heart rate) upon exposure to a reminder of the traumatic event

Criterion C
Frequent avoidance of reminders associated with the traumatic event, as demonstrated by one of the following:

  • Avoidance of thoughts, feelings, or physical sensations that bring up memories of the traumatic event1
  • Avoidance of people, places, conversations, activities, objects, or situations that bring up memories of the traumatic event

Criterion D
At least two of the following negative changes in thoughts and mood that occurred or worsened following the experience of the traumatic event:

  • Inability to remember an important aspect of the traumatic event
  • Persistent and elevated negative evaluations about yourself, others, or the world (for example, “I am unlovable,” or “The world is an evil place”)
  • Elevated self-blame or blame of others about the cause or consequence of a traumatic event
  • A negative emotional state (for example, shame, anger, or fear) that is pervasive
  • Loss of interest in activities that you used to enjoy
  • Feeling detached from others
  • Persistent inability to experience positive emotions (for example, happiness, love, joy)
Criterion E 
At least two of the following changes in arousal that started or worsened following the experience of a traumatic event:
  • Difficulty concentrating
  • Feeling constantly “on guard” or like danger is lurking around every corner (or hypervigilance)
  • Heightened startle response
  • Impulsive or self-destructive behavior
  • Irritability or aggressive behavior
  • Problems sleeping

Criterion F
The above symptoms last for more than one month.

Criterion G
The symptoms bring about considerable distress and/or interfere greatly with a number of different areas of your life.

Criterion H
The symptoms are not due to a medical condition or some form of substance use.

So there was a little excitement already today.

8:20am: We took the dogs outside. We fed the dogs.
The little girl isn’t eating her food for the second day…. and we’re a little worried..
We took the dogs outside again and made a double espresso with whipped cream.

1:20pm: We had the dogs in the Home Office and now they’re in the bedroom.
We just ate a toasted cheese sandwich and we made an iced espresso to drink.
And it is AFRICA HOT outside today.

Saturday, April 24, 2021 – Saturday!

4:20am: We slept for a few hours and then we woke up early, before 4:00am.

8:45am: We went back to bed.
The dogs got fed, the dogs went outside.
We drank a cup of espresso.

We watched “History Detectives” – an episode we’ve seen before on Rock and Roll stuff.
It features Bob Dylan’s Fender guitar from Newport ’65, a couple of Beatles’ autographs, and a Frank Zappa art piece. Great episode.

The 2012 episode found out that the airplane pilot’s daughter had the guitar in New Jersey, and after a legal battle, she sold the Stratocaster at auction. Indianapolis Colts owner and Rock and Roll collector, Jim Irsay bought Dylan’s Newport guitar in 2013 for $965,000.

Irsay also bought Jerry Garcia’s one-of-a-kind “Tiger” guitar, made by Doug Irwin, at auction for $957,000 in 2002, and spent Five Million Dollars on some of David Gilmore’s guitars when they were auctioned for charity a few years ago. He has an amazing collection.


10:05am: We took the dogs outside again. We made another cup of espresso.
And then we cut up a pineapple, and ate a couple pieces.

12:25pm: We are chillin’ in the Home Office with the dogs again.
We took them outside and now they’re napping.
We made another cup of espresso and ate brunch/lunch.

We drank a cup of espresso and some orange juice.  Drink Coffee. Drink Water.
We ate a toasted onion bagel with cream cheese.

12:10pm: SUNDAY! SUNDAY! And we have liftoff.
We went back to bed and slept for a little bit. And then there was barking…..
We took the dogs outside. And now we are fully chill. But we are hungry too.
Choreboy is about to arrive, and now there’s some stuff to do around the house.

So, Choreboy did two loads of laundry and scooped all the poop.
He cleaned out the fridge, which was already pretty empty.
And then he did some dishes. He’ll be back tomorrow most likely for more.
It’s cold, and gray, and windy outside today.
We ate a toasted egg bagel with peanut butter and raspberry jam for lunch.
And we made some popcorn and drank a coke during the Oscars.

Okay, here’s one for #StorySunday (on Monday):
Way back in the mid 1980s, we started gambling in Reno, Lake Tahoe and Las Vegas. And then we started working in the Hollywood film industry in 1989, and we met Frankie Valli and a old school “Friend of Frank’s” comedian named Joey Villa. Joey was friends with Meshulam Riklis and his wife Pia Zadora. Riklis was a corporate raider who bought the Riviera in 1973. Our friend Joey was booking the comedy room at the Riviera and also appearing in the “Splash” Revue stage show for many years, so when we visited him in Las Vegas in 1991, it was all VIP fun and a big party with Perry Como in the Penthouse. It was Old School Vegas, with real mobsters, and black tie glamour, at the Riv. “And now it’s all gone” They blew it up and tore it down, and now it’s a parking lot for the expanded LV Convention Center. Vegas just eats its own. So, we have a matching set of souvenir Riviera mugs, and ashtrays, and matches and even mini shampoo bottles from the many hotel stays. And sometimes we stayed next door at the El Morrocco/La Concha Motel or at another Strip hotel. And so we found this mug when thrifting, right before they announced the closing and demolished the hotel in 2015. We have so many crazy Las Vegas stories. They moved the Crazy Girls bronze statue to Planet Hollywood, so you can still see rub their butts for good luck. 2:50am: Hello Monday morning, we’re up early. We fell asleep with the dogs for a little bit.
Not sure how long. It’s too early. So, we thought we’d update this Blog Post…. 

4:45am: Two hours later. And we decided to try to watch Disney/PIXAR’s “Soul” again.

NOTE: “Soul” was great. It was beautiful. And it had a great Disney ending.

11:55pm: Recapping Monday. Nothing happened.
We didn’t mean to take the day off, but it happened.
The dogs got fed. The dogs went outside. We got the newspapers and the mail.
The housekeeper came. We took a nap with the dogs. We drank espresso.
Drink coffee. Drink water.
It was a nice day outside. And now it’s overcast and drizzling a littlest midnight.
We ate a toasted bagel with cream cheese for lunch. And we just made dinner.
On The Menu: Mac’n’cheese just before midnight (and we are done now)

5:45am: We were up all night again.
And we just posted our “New Recipes For 2020” and “CV! Part 92” Blog Posts.

9:30am: We are so tired. And now we’ve had our second cup of espresso.
We may have slept for two hours this morning between 6:00 and 8:00am.

11:00pm: Well, it’s been another day. ThrowbackThursday.
More frustration. And we didn’t sleep, so we were cranky all day.
And we still haven’t eaten yet today really.
All we had 2 toasted English muffins with butter and raspberry jam, and a small banana.
We put on pants and ran errands today. And really tried to avoid other people.
We slept this afternoon for a little bit, and then we fell asleep again this evening.
Now we are awake and hungry. And we want Latkes, but then we have to cook.

Friday, December 18, 2020 – Hanukkah’s over. ‘Tis the Season!

We are not going to do a Christmas music or Christmas Blog Post.
There’s no reason to celebrate the holiday this year.
TRUMP KILLED CHRISTMAS – just like he killed 310000+ US Citizen….

“Home for the Holidays” has a new meaning this year.
As in STAY THE FUCK HOME! No Christmas Parties Please.
We are invited to our friend’s annual New Years’ Eve Party…..
and we are not going this year. Sorry, not sorry. But still sorry.
We won’t be attending any parties this year. but thanks for the invites!
And you shouldn’t attend any parties, gatherings, dinners, or other events!
We are dreaming of Las Vegas, and we are not going! Vegas isn’t safe.
We are “safer-at-home” in Los Angeles, sheltering in place, and waiting.
We cancelled the housekeeper’s second day this week, extra day off for her.
And we’ll still pay her. We love her! She is family, not just domestic help.

On The Menu: Chicken chili super soft taco with avocado at 12:30am.

10:45am: Hello Friday.
We slept. We woke up. We’ve had two cups of espresso.
We ate 2 toasted english muffins with butter and raspberry jam for breakfast.
The dogs got fed. We got the newspapers and the mail.

4:00pm: We slept for awhile. 11:00-1:00, 1:00-2:00, 2:00-3:00
Wow, 4 hours, waking up every hour or so and then going back to sleep.
The dogs got fed an early supper and they had a long beautiful day of play and napping.

We finished binge-watching “The Good Lord Bird” limited series about John Brown on Showtime. Very well done. Ethan Hawke is excellent as the madman lunatic fanatic!
Great period piece (pre-Civil War), excellent cast and acting, excellent cinematography,
It was also very well written and well executed, with a “timeless theme” that is very timely for our current state-of-affairs and all things BlackLivesMatter and more. Thumbs up.

On The Menu: Dinner delivered from The Cheesecake Factory: orange chicken with rice and vegetables, Sante Fe salad, tiramisu cheesecake, and a coke to drink.

And then we watched TV and surfed the interweb.
Friday night on the Las Vegas Strip – there are still a lot of people out on the weekends!
And the Showgirl Mafia is always at work!
The week before Christmas in Vegas sucks.
And then imagine this year for locals in Las Vegas,
after 10 months of Trump’s CORONAVIRUS PANDEMIC.

And then we watched a guy build a luxury jungle outhouse out of jungle stuff
with a machete, stone axe, basket, clay pot, and a shovel tool too.

We finally fell asleep around 5:30am.

NFL Football on Saturday! Buffalo Bills v. Denver Broncos at Mile-High.
Denver is wearing their all orange “throwback” uniforms –
AND THEY SHOULD NEVER WEAR THEM AGAIN! Just UGLY.
“The Broncos are the only team with a turnover in every game.”
The first half, the Broncos sucked, and the Bills led 21-7.
Then Denver forgot to bring their game in the second half.
YES THE BRONCOS LOST AGAIN.
And Green Bay beat Carolina in the evening game.
We changed the channel, and fell asleep again before the game ended.
We slept until about 7:30pm.

Sunday, December 20, 2020 – SUNDAY! SUNDAY!

On The Menu: Chicken matzah ball soup, that we made earlier in the day
and we finally ate some just after midnight. It was delicious and filling.

We slept for a couple hours this morning.
We had a cup of espresso and went to bed around 6:00am. Woke up around 10am.
The dogs got taken care of, of course.
We woke up feeling okay, but our day went to hell pretty quick.
TRIGGERED. PTSD. Trying to keep control of our emotions.
Feeling very angry. Feeling trapped. Feeling FURIOUS! Not wrong to feel this way.
We have some unresolved issues, from our “happy” childhood, from teen adolescence,
and some wounds that will never heal – no matter how hard we want them to.

On The Menu: Sunday Brunch! Breakfast for lunch.
2 eggs over medium, bacon, quesadilla with salsa and red grapes

5:00pm: and things are a little better now – calm is restored temporarily – Breathe in.
Breathe out. WE ARE NOT OK. We took a short nap, and slept through most of the second football game today. The Rams lost to the NY Jets here in an empty just-built billion dollar stadium in Los Angeles. Seriously, they were still building SOFI Stadium last December!

And now its time for the Cleveland Browns v. New York Giants game!
The dogs got fed and we went outside, and now we are all chillin’ in the Home Office.
We had another espresso and we did a little cleaning up during the second half.
We knew the Browns were going to win, and they dominated all game long.
And it’s just after 8:00pm, the game is almost over.
Browns 20, Giants 6, with less than 2 minutes left,
so we don’t think they’re going to stage a comeback.
And we’re hungry for dinner or something now.

Island Barbecued Pork Ribs

2 slabs of Raw Pork Spare Ribs (4 lbs)
Dry Seasoning:
1 cup Kosher Salt
1 teaspoon Celery Salt
2 Tablespoon Mesquite Seasoning
1 Tablespoon Onion Powder
1 Tablespoon Garlic Powder
3 Tablespoon Sugar
1 teaspoon Ground Black Pepper
Sauce:
1 cup Tomato paste
1 Tablespoon Corn Syrup
1 Tablespoon Molasses
1 Tablespoon Dijon Mustard
2 Tablespoon Honey
1 cup Pineapple Juice
2 Tablespoon Rice Wine Vinegar
1 teaspoon Granulated Garlic
1 Tablespoon Onion Powder
1 Tablespoon Caramel
1/4 teaspoon Smoked Liquid

Barbecue Sauce Preparation:
In a mixing bowl combine all ingredients and mix well. Keep refrigerated.
Preparation:
Mix all dry ingredients and lightly season the pork rib slabs on both sides.
Marinade for 12 hours. Remove seasoning from exterior of ribs before cooking.
Cook seasoned pork ribs at 325°F for 1 hour.
Cut ribs while hot into individual pieces (one bone each) and place in baking dish.
Heat barbecue sauce to a simmer and pour over all the pork ribs.
Cover the dish with aluminum foil and place it in a warm oven at 200° for 30-45 minutes.
Makes 4-6 servings


Island Pulled Pork

1 lb shredded pork
Sauce:

1 cup Tomato paste
1 Tablespoon Corn Syrup
1 Tablespoon Molasses
1 Tablespoon Dijon Mustard
2 Tablespoon Honey
1 cup Pineapple Juice
2 Tablespoon Rice Wine Vinegar
1 teaspoon Granulated Garlic
1 Tablespoon Onion Powder
1 Tablespoon Caramel
1/4 teaspoon Smoked Liquid

Barbecue Sauce Preparation:
In a mixing bowl combine all ingredients and mix well. Keep refrigerated.
Preparation:
Steam shredded pork untill fully cooked.
Mix in bowl with BBQ sauce, add water to thin the BBQ sauce so pork doesn’t dry out.
Cook covered at 350 for 30 minutes.
(We recommend serving on King’s Hawaiian sweet rolls or buns)

Mango BBQ Sauce

4 ounces Mango slices (in syrup)
16 ounces Ketchup
2 ounces Onion
1/8 ounce Cinnamon
¼ ounce Cumin
¼ ounce Garlic
8 ounces Water
2 ounces Sweet chili paste

Barbecue Sauce Preparation:
Sauté onion with cumin, garlic and cinnamon.
Add remaining ingredients and cook until boiling.
Puree well and serve hot.


Peanut Sauce

Ingredients:
2 cloves garlic, peeled
2-inch piece ginger, peeled
1/2 cup peanut butter
1/4 cup each: soy sauce, sugar and water
1/8 cup diced Spanish onion
1 tablespoon chopped peanuts

Peanut Sauce Preparation:
Combine ingredients in pan. Bring to boil while stirring.
Reduce heat and simmer for 10 minutes, stirring occasionally.
Remove from heat, pour in blender. Pulse until smooth.


Beef Teriyaki
A grilled 10 oz sirloin strip with sauce, served with veggies and mashed potatoes.

Sauce:
1 cup low-sodium soy sauce
1 ounce sugar
1/4 cup Sake
1/4 cup Mirin
1/2 teaspoon minced garlic
1/2 teaspoon minced ginger
1/4 cup diced green onion
1/2 cup pineapple juice
1/2 cup cornstarch and water

Teriyaki Sauce Preparation:
Combine and bring all ingredients, except cornstarch to a boil in a saucepan.
Bring to a boil and reduce to a simmer, then stir in the cornstarch and water mixture. Cook for an additional 10 minutes. Strain the sauce through a colander.

Mashed Potatoes

Ingredients:
10 pounds Red potatoes with the skin on
1 pound unsalted butter
1 pound sour cream
1/4 cup salt
1 tablespoon pepper

Preparation:
Boil the potatoes until tender.
Mix all ingredients except potatoes in a mixture. Add the potatoes and mix well.


Scalloped Potatoes​

Ingredients:
1 pound Russet potatoes (washed and sliced)​
1 cup heavy cream​
1/4 cup cheddar cheese​
2 tbsp parmesan cheese​
1/4 cup thinly sliced sweet onions​
1 tsp kosher salt​
1/4 tsp black pepper​

Preparation​:
Combine all ingredients in a greased baking pan.
Bake for 1 hour at 350 degrees. Let stand five minutes before serving.


Macadamia Honey Butter

Ingredients:
2 sticks Salted Butter
2 tablespoons Honey
4-6 Macadamia Nuts

Preparation:
Preheat oven to 350°f.
Chop macadamia nuts in a food processor into small pieces.
Place chopped nuts on a cookie sheet and bake for 6 minutes until they are toasted. Removed nuts from cookie sheet and allow to cool.
Place butter & margarine in mixer and mix until whipped.
Add chopped macadamia nuts and honey and mix until fully incorporated.
Place in a container and serve soft.
Makes ½ lb.

Howdy Cornbread:

Ingredients:
3/4 cup cornmeal
1-1/4 cup sugar
1-1/2 teaspoon salt
1 teapoon baking powder
1-3/4 cup flour
1/2 cup vegetable oil
1 cup milk
2 eggs

Preparation:
1. Mix flour, cornmeal, salt, baking powder and sugar in a mixing bowl
2. In a separate bowl, blend milk, eggs and oil with a mixer
3. Using that same mixer, slowly add the blended liquids to the dry ingredients prepared in step 1, mixing just enough to incorporate the wet and dry ingredients.
4. Grease a 9×13 baking pan with oil or spray with nonstick cooking spray and pour the batter into the pan, spreading evenly.
5. Bake in a preheated oven at 375 degrees for 20-25 minutes or until golden brown.

Tonga Toast

2 or 4 slices sourdough bread, cut 1 to 1 1/2 inches thick
1 banana
1/3 cup sugar
1 teaspoon cinnamon
1 egg
1/4 cup milk
1/2 teaspoon vanilla extract
oil or shortening for frying
whipped butter and/or syrup

Preparation:
Cut a 1-inch pocket in one side of each bread slice.
Cut banana in half crosswise, then split each piece lengthwise.
Remove peel and stuff 2 pieces of fruit in each pocket of bread; set aside.
Mix sugar and cinnamon; set aside.
Mix egg, milk and vanilla extract.

Heat about 4 inches of oil in a pan to 350 degrees F.
Dip stuffed bread in egg/milk mix and soak a few seconds to penetrate bread.
Fry bread on both sides in hot oil until lightly browned, about 3 minutes.
Drain on paper towels or wire rack.
Use cinnamon sugar as desired. Serve with real maple syrup.

Honey Coriander Chicken Wings

1 lb chicken wings (trimmed and cut)

For the wing seasoning:
1 tablespoon kosher salt
1 tablespoon ground paprika
1 tablespoon sugar
1/4 teaspoon pepper
1/4 teaspoon turmeric
1/4 teaspoon cinnamon
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper

For the coriander wing sauce:
1/2 cup honey
1/4 cup low-sodium soy sauce
1 tablespoon cornstarch
1/2 tablespoon chili powder
1/2 tablespoon fresh lime juice
1/2 tablespoon ground coriander
1/4 teaspoon ground ginger

Preparation:
Preheat the oven to 450 degrees.
Mix wing seasoning ingredients in a small bowl.
Put chicken and 2 tablespoons of wing seasoning in a large bowl.
Add oil and coat the chicken evenly. Mix well.
Spread seasoned chicken in a single layer on prepared cooking sheet.
Bake for 20 – 25 minutes or until the thickest part of the chicken reaches 165 degrees.
Place wing sauce ingredients in a large pan, and simmer over medium-low heat.
Cook and stir until thickened. Transfer the cooked wings into the sauce and serve.


Polynesian Luau Chicken

Ingredients:
1 whole chicken ( 2-3 lb)
1 tablespoon poultry seasoning
1 tablespoon black pepper (ground)
3 tablespoons rosemary ( ground)
1 ½ tablespoons garlic powder
1 tablespoon curry powder
2 tablespoons onion powder
1 tablespoon Chinese five spice powder
2 cups sugar
1 cup chicken base
1 ½ tablespoons garlic salt
3 tablespoons fennel ( ground )

Preparation:
Clean and cut chicken into 8 pieces, ( 2 breasts, 2 wings, 2 legs, 2 thighs) .
Combine all ingredients in large mixing bowl,
Season chicken and marinate at least 3 hours or overnight if possible.
Preheat oven to 375ºF.
Place chicken on wire rack in a roasting pan and bake for 20 minutes.
Reduce heat to 250ºF and bake for another 30-40 minutes .
Chicken should be crispy and golden brown.

Buffalo Hot Wings!

Ingredients:
Chicken wings (trimmed and cut)
1 cup all purpose flour
3 eggs
1/3 cup water
1 stick of Butter
1 bottle of Frank’s Red Hot sauce
1/2 tsp garlic powder
1/2 tsp black pepper
1/2 tsp salt
dash(es) Tabasco
dash(es) Worcestershire sauce
Vegetable oil (for frying)
Instructions:
Preheat oven to 325 degrees.
Heat 2″- 3″ of vegetable oil to 400 degrees in heavy pot.
Whisk flour, eggs, 6 oz of Frank’s Red Hot sauce, a couple dashes of Tabasco and Worchestershire sauce, garlic, and black pepper in a large bowl until it makes a batter.
Salt the chicken wings and add them to the bowl, Coat them thoroughly with batter.
Fry the chicken wings in hot oil for 5-7 minutes until cooked golden brown.
Remove the chicken wings from oil and drain on paper towels.
Melt butter in a saucepan on the stove, then add 6 oz of Frank’s Red Hot sauce, a dash of Tabasco and Worcestershire sauce and simmer quickly.
Place chicken wings in oven safe dish (PYREX or a metal pan) and cover them with sauce.
Bake in oven for 15 minutes. Remove and coat with heated sauce again.
Garnish with celery & carrot sticks
Serve with Blue Cheese and Ranch dressing


Gratin de Macaroni

Ingredients:

  • 1 Box or Bag of macaroni noodles
  • Salt
  • Pepper
  • Nutmeg
  • Gruyère cheese (one block)
  • Shredded parmesan cheese (for topping the dish)
  • 4 tablespoons Unsalted butter
  • 1/3 Cup Flour
  • 3 cups Milk

Preparation:

  1. Preheat oven to 400°F.
  2. Boil pasta as directed. Drain, rinse, and set aside.
  3. Heat milk in saucepan until warm.
  4. Melt butter in separate saucepan.
  5. Make a roux: Add flour to melted butter. Stir out any lumps.
  6. Slowly whisk in milk. Add a little at a time and again, stir out any lumps.
  7. Add nutmeg, salt and pepper to taste.
  8. Whisk and cook for about 10 minutes, or until roux has thickened.
  9. Add half of the Gruyère cheese to the roux and stir until melted.
  10. Add more nutmeg, salt and pepper if needed.
  11. Combine cooked macaroni with cheese sauce.
  12. Butter a large baking dish and add macaroni and cheese.
  13. Top dish with remaining Gruyère and parmesan cheese.
  14. Cover dish with foil and bake for 10 minutes.
  15. Remove foil and continue baking until top layer of cheese is melted.

Bread Pudding

Ingredients:
5 eggs
3 cups whole milk
1/2 tsp salt
1/2 tsp nutmeg
1 1/2 cup sugar
8 cups french bread

Preparation:
1. In bowl mix eggs, milk , salt, sugar and nutmeg. Set aside.
2. Cut bread in medium pieces, place on cookie sheet pan put in 350 degree oven.
3. Bake bread until lightly toasted, about 15 minutes. Remove bread and place in egg and milk mixture.
4. Place mixture in a greased 10-inch cake pan and bake at 325 degree for 1 hour.
5. Let stand 5 minutes, serve hot with ice cream.

Banana Foster Sauce

Ingredients:
4 oz sugar
4 oz brown sugar
4 oz corn syrup
4 oz unsalted butter
1cup heavy cream
1 tsp vanilla extract
1cup spiced rum
1cup banana slices

Preparation:
1. Combine sugar, brown sugar, corn syrup, butter and half of heavy cream in a large pan. Bring to a boil and slowly add remaining heavy cream keeping mixture at a steady boil.
2. Add spiced rum and flambe.
3. Candy will brown slightly; cook 3 minutes until candy forms into a firm ball in cold water. Remove from heat and add vanilla. Add sliced bananas. Serve warm.


Caramel Creme Brulee

Ingredients:
16 ounces Heavy Cream
6 ounces Caramel
5 ounces Egg yolks

Preparation:
1. In a saucepot over the stove, heat the heavy cream and caramel and bring to a simmer. Turn off the heat and add the egg yolks to the heavy cream mix.
2. Wisk until all ingredients are incorporated.
3. Pour 7½ ounces in each ramekin and bake at 250°F for 1 hour and 25 minutes.
4. Chill for at least 2 hours.
5. Top with fresh bananas, sprinkle with sugar and torch.


White Chocolate Bread Pudding
Bread pudding is considered the “apple pie” of South Louisiana. Because of heavy French influence, crusty French bread is available. Just milk and eggs, combined with leftover bread and the addition of white chocolate sweetens up this Southern dessert.

Ingredients:

  • 9 ounces Bakers white chocolate
  • 3 (10-inch) loaves French bread
  • 4 whole eggs
  • 6 egg yolks
  • 4 cups heavy whipping cream
  • 1 cup milk
  • 1 cup sugar

Preparation:
Preheat oven to 300 degrees F.
Slice French bread into 1/2 -inch thick round croutons and set aside.
In a large mixing bowl, combine eggs and egg yolks.
Using a wire whisk, whip until well-blended and set aside.
In a large saucepan, combine whipping cream, milk and sugar.
Bring mixture to a low simmer then add white chocolate.
Using a wire whisk, stir until chocolate is completely melted.
Remove pot from heat and, stirring quickly, add whipped eggs to the cream mixture.
Blend thoroughly to keep eggs from scrambling.
In a 9″ x 13″ baking dish, place bread slices in 2 to 3 layers.
Pour 1/2 of the cream mixture over the bread, allowing it to soak up most of the mixture prior to adding the rest.
Using your fingertips, press the bread gently allowing the cream mixture to be absorbed evenly into the bread.
Pour remaining cream mixture over the bread and repeat process.
Cover dish with aluminum foil and allow to soak a minimum of 5 hours prior to baking.
Bake, covered, for approximately 1 hour then remove foil and bake 45 additional minutes or until top is golden brown.

This bread pudding is actually better if chilled in the refrigerator overnight, after baking, then cut into squares and heated in individual portions in the microwave.

You may wish to create a white chocolate sauce for topping the bread pudding by combining 8 ounces of melted white chocolate and 3 ounces of heavy whipping cream. This may be done in a double boiler or microwave.

PREP TIME: 2 Hours SERVES: 6-8

Dole Whip! (for a single serving)
Ingredients:
1 big scoop of ice cream
4 oz of pineapple juice
2 cups of frozen pineapple

Instructions:
Add all ingredients to a blender until it’s a thick drink.
Add your swirl and then you’re done.

Churros!
Ingredients:
1 cup water
8 tablespoons butter
¼ teaspoon salt
¾ teaspoon ground cinnamon, divided
1 ¼ cups all-purpose flour
3 eggs
1 ½ cups vegetable or canola oil
½ cup sugar

Instructions:
Combine water, butter, salt, and ¼ teaspoon cinnamon in 1 ½-quart saucepan over medium heat. Bring pot to rolling boil.
Reduce heat to low.
Add flour and stir vigorously until mix forms a ball. Remove from heat and let rest for 5-7 min.
Add eggs, one at a time, and stir until combined. Set aside.
Heat oil in medium skillet or 1-quart saucepan over medium-high heat or until temperature reaches 350˚.
Spoon dough into piping bag fitted with large star tip. Pipe 1-inch strip of dough over saucepan, cut with knife, and drop into hot oil. Repeat until churro bites fill saucepan with room to fry.
Fry churro bites until golden brown. Remove with slotted spoon or mesh spider strainer.
Drain churro bites on paper towel.
Mix sugar and ½ teaspoon cinnamon in medium bowl. Toss in churro bites until coated. Place on serving plate and serve with favorite dipping sauce.

It’s been a year (and a half) since we planted my father’s body in the ground in Southern Oregon. The headstone unveiling, after a year of mourning, is a Jewish tradition, so we returned to Ashland for the dedication, to see family, and to take care of a little business.

ROAD TRIP to Ashland, Oregon!
Los Angeles, California to Ashland, Oregon via I-5 north

We have found the drive from Los Angeles is much better at night. Interstate 5 between The Grapevine and Sacramento and Sacramento and Redding is a long flat drive through the Central Valley of California. There are a lot of “big rig” trucks and only two lanes most of the way, which makes for slow tourists trying to pass, and that creates dangerous situations when other drivers “can’t wait” and do stupid things. So, there are not a lot of tourists if you drive after 9pm, most are asleep for the night, and the truckers have restrictions on the hours they can drive, so many of them have to stop and rest. And that means less traffic, less stupid drivers, fewer cops and better road conditions if you don’t mind driving at night and the bugs on your windshield. Also, the heat and sun can be terrible during the day (even with air conditioning) so there’s that too.

If the timing is right, you will get a beautiful sunrise sometime after you pass Redding! Sunrise on Mount Shasta, or coming through the Siskiyou Pass, is a fine experience. There are nice places to stop along the way if you get tired: rest stops, motels, casinos and trucker rest areas along the highway (both commercial and off-ramp/road-side turnouts). We like to drive straight through, stopping only for gas and rest breaks, if we’re doing it at night. We pack food, drink and a change of clothes. Our car is prepared for roadside emergencies, and we have the enhanced auto club coverage with 100 miles towing for our long road trips.

We arrived in Ashland early morning and decided to stop for a big breakfast at the Morning Glory Cafe. We like the place but it can get very busy. Free parking next door at the M-otel. We parked, stretched, and then we got a seat at the counter without having to wait and enjoyed our food.

After breakfast we drove to the motel and tried to get an early check-in, but no luck. So, we went thrifting/antiquing for a couple hours. We drove to Medford and back, made a few stops, and drove to The Ranch. We hung out until it was time to check-in, then drove back to the motel and moved into our room.

Family stuff all weekend and then Dad’s headstone unveiling on Sunday afternoon.
Most of the family activities were small and personal and we didn’t take pictures. We had family dinner at The Ranch on Friday, dinner at Beasy’s on The Creek in Ashland on Saturday, and a post-ceremony gathering at The Ranch after the unveiling on Sunday.

Our accommodations for the weekend:

The room was spacious, clean and equipped with a fridge and microwave. There was also a large “Jacuzzi Tub” in the room, set in a weird space adjacent. We were told it was the only room with this kind of tub. There was also a skylight in the weird space, and there was no way to cover it or block the light from the rest of the room, which was a problem because we like it dark. We got some black trash bags and tape from the front desk and tried to jury rig a “blackout” shade, but it was not very successful.

We could have moved to another room, but it was also graduation weekend for the local high schools and Southern Oregon University in Ashland, so everything was booked solid on Friday night everywhere in Jackson county, so we just decided to go with it and enjoy the tub.

We stayed here last year for the funeral weekend and it was a pretty good “no frills” option, convenient to roads that lead to The Ranch. And yes we were invited to stay at the house, but we would be surrounded by family, and without private space, so we spent the additional money for the motel room and “peace of mind”.

The Comfort Inn has a nice daily Breakfast Buffet served in a large dining room next to the lobby. The start serving the hot breakfast early and it’s a pretty nice spread with good options. And they also have FREE coffee all day and night.

On The Menu: scrambled eggs with bacon or sausage, Mexican egg scramble, waffles (make them yourself), fresh fruit, cereals, milk, juices, coffee, tea, bagels, bread for toasting, mini-croissants, donuts, muffins, yogurt and more.

Family Dinner at The Ranch on Friday night

After checking in, cleaning up, and taking a short nap at the motel, we drove back to The Ranch and had a nice dinner with the immediate family. After dinner we stopped at the market, bought provisions for the weekend and a bottle of Mister Bubble, and then returned to the motel and took a long hot bubble bath in the in-room “Jacuzzi Tub”.

We slept and woke up early on Saturday. After enjoying the breakfast buffet at the motel, we went back to bed. We woke up, got ready and went up to The Ranch to be social, and then went into Ashland, and then up to Medford, before returning to the motel to clean up and get ready for dinner.

The family went out to dinner at Beasy’s on The Creek in downtown Ashland. It was Dad’s favorite restaurant for entertaining, the Chef/Owner is a good friend, and we had his “Bilbo Baggin’s” Farewell Party for all his friends there. It was a great meal but there was a lot of emotional stuff happening at the table during dinner.

6oz filet with 2 prawns, broccoli, potatoes au gratin, clam chowder, bread and butter, wine, a coke, and pot du chocolate for dessert.

“Surf & Turf” Dinner at Beazy’s on the Creek in Ashland, Oregon

After dinner we went back to the motel and tried to sleep, but we couldn’t. Too much stuff going on in our head and not tired/insomnia. It was a long night at the motel. We finally fell asleep for a little while and then hit the Sunday breakfast buffet. We hung out until it was time to caravan over to the cemetery for Dad’s headstone unveiling.

It was a truly beautiful day and the weather was absolutely perfect. There was a gathering of family and close friends at the gravesite, and the Rabbi performed a brief service to dedicate the headstone. It is a Jewish tradition to wait a year (and mourn the dead) before placing the headstone at the grave. And so, we gathered and the headstone was unveiled, and it was a very emotional afternoon. Then after the service we went back to The Ranch for a reception and celebration of his life with more food and drink.

After the reception we went back to the motel and took a nap, and when we woke up we hung out until we got hungry. We drove up to Medford to the In-n-Out Burger (the first one in the state) and got some late-night food.

Got that In-n-Out Urge! Also, there aren’t a lot of late night options on Sunday in Ashland, so two Double-Double cheeseburgers and a chocolate shake was a terrific choice for familiar and inexpensive comfort food after a long and emotional day.

We returned to the motel, took another hot bath in the “Jacuzzi Tub”, took a hot shower, and tried to sleep. When the morning came around we woke up and enjoyed the breakfast buffet again. We packed up our stuff and loaded the car and checked out of the Comfort Inn at noon on Monday.

Family stuff is just exhausting! Our brother flew in Saturday morning and left on Sunday afternoon. Our east coast aunt left on the early morning flight to New York from Medford with a layover in Denver. Our sister left on a later flight Monday for Los Angeles with a layover in San Francisco. And our other aunt and uncle (and their caregiver) left Tuesday around noon on a flight to Phoenix, Arizona.

We moved to The Ranch for the next two nights (Monday and Tuesday) after my brother, sister and east coast aunt had left town. We checked out of the motel and moved into our east coast aunt’s guest room, which used to be my father’s office. It was weird being in the space and sleeping in a bed located where his desk once was, and there were still remnants of his office stuff and the same pictures on the wall to add to the weirdness….

We stayed around the house and there was an afternoon nap, before we went out to dinner in downtown Ashland.

We went out to eat again with our aunt and uncle (and their caregiver) and stepmother at Lark’s Country Kitchen in the Historic Ashland Springs Hotel. Our aunt and uncle wanted a good burger. and they have a good burger on the lunch menu, also available “off the menu” at dinner on request. We called and confirmed this and made an early reservation. There is no theatre in Ashland on Mondays, the stages are dark, and the OSF has the day off, so there was no pre-theatre dinner rush to worry about. We enjoyed a wonderful relaxed dinner in the dining room with a nice view of Ashland’s main drag, also less crowded on Monday, but alway good for people watching.

The fried chicken breast was excellent! And everyone enjoyed the burgers too. After dinner, we returned to The Ranch and tried to sleep. It was another long night.

Tuesday was a “take care of business” day. We had a mission to document the details of the Music Master Tape Library and go through a few boxes of Dad’s family photographs. It took all day to complete the tasks, and we had leftovers from the weekend for dinner, packed most of our stuff, and went to bed early.

Ashland, Oregon to Oakland, California on Wednesday morning 8am – 1:30pm

We woke up very early, loaded the car, had a quick breakfast sandwich, and hit the road headed south on Wednesday morning with our friend’s house in Oakland, California as our afternoon destination. It was another beautiful day and the drive was pretty easy. We stopped for gas in Santa Nella and missed the I-505 intersection at Winters. So we had to go further south (80 to 680 to Walnut Creek) to go east into the Bay Area. The “detour” added a little extra time, but it was another beautiful day, so we didn’t mind too much. There was a little traffic coming into Oakland, but it was a really nice drive.

NOTE: WATCH OUT FOR THE CALIFORNIA HIGHWAY PATROL!
There were a lot of cops on the road during the daytime. They drive marked cruisers, Ford Mustangs and SUVs, as well as unmarked cars (white and blue spotted this trip). Watch your speed, watch your mirrors, and watch out for hidden speed traps!

Wednesday Afternoon in Oakland, California (well, actually in Piedmont)

We arrived at our friend’s house and parked around 1:30pm in the afternoon. And after a quick stop there to refresh and relax, we decided to go afternoon day drinking at a local bar within walking distance and then have something to eat TBD nearby in the neighborhood.

Kerry House in Oakland, California

First stop was Kerry House, a divey neighborhood bar with cheap drinks, on Piedmont Avenue in Oakland.  Asked if they had “fresh cream” and ordered a White Russian (aka “a caucasian” made with vodka, coffee liqueur and fresh half&half) when the bartender said yes. Then we waited while the doorman went to the corner store and bought small cartons of milk and half&half, so yes it was fresh! We also had some chips and our friend had a couple of Cosmopolitans (vodka and cranberry juice).

We offered to take our friend out to lunch or dinner, whatever they wanted. The sushi restaurant didn’t open until 5pm, and with our day drinking and another stop at the nearby coffee house for an Italian espresso with whipped cream, we could have gone there. Instead it was decided that we would cook dinner for our friend, so we went to the local market and bought some good food to prepare and consume at her house.

We prepped the food and put the ribs in the oven to cook for an hour and a half.
Then we had a little nap during the Basketball Game which was being played in Oakland.

Final Score: Toronto Raptors 123 – Golden State Warriors 109 (series tied 1-1)

After the game was over, we enjoyed a very nice dinner and hung out until 11pm.
Then we hit the road again for another long night drive to Los Angeles. Because of traffic (caused by the game and construction) we had to go north to go east to go south and we added some extra miles, but probably saved some time by following Google Map back to I-5 south.

The least-traveled and probably least known of the region’s toll bridges, the Antioch Bridge, is a steel plate-girder automobile/bicycle/pedestrian bridge that crosses the San Joaquin River. The Antioch Bridge links Antioch with Sherman Island in southern Sacramento County, near the city of Rio Vista.

Once we reached the I-5 south it was an uneventful drive, with a stop to fill the gas tank and empty the bladder and a rest stop to stretch and use the restroom. There was a lot of construction work and one bad traffic accident ( a car went off the highway and into a deep ditch off the elevated road) and we were pretty sure there were fatalities as we passed. Another obvious reason to ALWAYS DRIVE SAFE and PAY ATTENTION!

We arrived in the San Fernando Valley just before 5:30am and as we reached the 405 freeway north, there was already “stop and go” traffic at the 101 intersection, so we exited and took surface streets home, with a quick stop at our PO Box to pick up the mail.

*well, it wasn’t last week…. more like last month. Tempus fugit!

We were invited (very last minute) to our friend Frank’s 65th Birthday Adventure:
(via a series of text messages)
– Come to Vegas if you want we have extra rooms
– We arrive Wed and lots of different rooms. Party on Saturday
– The party at Topgolf should be good even if you dont golf. Has a private pool for us
– Then we got a big cabana by our pool Friday Saturday and Sunday

So, let me think about it….. and Road Trip to Vegas!
Left the beautiful San Fernando Valley at 1:30am on Thursday morning.
Highways to Las Vegas: 101north-134west-210west-10west-15north
We drove a rental truck, a no-frills silver Nissan Frontier, with unlimited miles.
No traffic! Driving 285 miles at night with the truckers on I-15 north.

“World’s Tallest Thermometer” in Baker, California

Stopped along the way in Baker, California, for gas and to see the “World’s Tallest Thermometer” once again lighting the side of the 15 freeway. It was “non-operational” for many years, but has been repaired and now it is again a beacon at night on the desert highway.
NOTE: Gas prices were “too f*ckin’ high” in Baker!

Arrived at South Point Hotel and Casino before 6am on Thursday.

We have always heard good things about the SouthPoint. People regularly recommend their buffet as being very good. They were also recently featured in the Showtime series “Action” about legal sports gambling, so as we rolled into town we decided to stop there.

Self Parking at SouthPoint is FREE. We parked outside, instead of in the structure, and it was only a short walk to the Casino entrance. We had to go to the High Limit Slots counter to get a Player’s Card because the Club Desk doesn’t open until 7am. We played some blackjack and a little video poker and won a little money.

We also earned 300 club points which entitled us to “spin the wheel” and we won 5000 points (so we cashed them out for $15.00), wandered around the casino, and then headed for their Breakfast Buffet.

NOTE: Get the SouthPoint Player’s Card and the Breakfast Buffet is only $9.95 + tax
(Really nice breakfast buffet for ~$11.00 + $5.00 tip for our server/waitperson)

After breakfast we headed out and drove to the Wyndham Grand Desert Resort near the MGM Grand and across the street from TopGolf at the south end of the strip.

Wyndham Grand Desert Resort

Parked near Tower 3, walked to registration at Tower 2 and Checked In.
Our friends had the rooms reserved and a quick phone call was made, our ID was checked, and we were handed a keycard and welcome instructions. We walked back to Tower 3 and met one of our friends in the lobby. She gave us the “nickel tour” of the resort property and showed us the adult pool and the cabana they had reserved for our party weekend. We walked back to Tower 3 and grabbed our luggage and weekend supplies out of the truck and rode the elevator upstairs.

Okay, something died. rotting trash beyond rotting. it was terrible. really terrible.
FOR THE WHOLE TIME! It was disgusting. It reeked. It stank.
Yes, we complained. And they tried to mitigate the smell with deodorizers and sprays, but they should have called for sanitary cleanup immediately. They were really good about apologizing and they gave our hosts credit for the inconvenience.

The Sweet Suite!
Tower 3, Room 392 at the Wyndham Grand Desert Resort:

Happily, the smell was only in the hallway. Once inside the room, a “lock-out” connecting room, adjacent to the first room our hosts stayed in…. they moved to the Presidential Suite, and her brother moved into their room. More on that later.

Each room had a nice kitchen area, living room space and private bedroom and bath. Mine was a little smaller than the room next door which also had a bar and bar seating in the living room space. I was very happy with the accommodations and also the fact that it was FREE! My hosts were treated to drinks, gifts and other forms of thanks all week long in appreciation for the invitation.

After the little tour of the resort the it was nappy time. Then once we were awake and active again, we joined our friends for a quick visit to the TopGolf mega-entertainment center across the street. We met our friends in the inside bar and had a cocktail while they finished their food (we were still full from the morning buffet).

Our friend’s birthday party was scheduled for Saturday afternoon in the Chairman’s Suite, complete with private pool and lunch buffet, so they went to check it out.  More on that party later……
We wandered around and toured the massive four deck facility. There were lots of bar and seating areas, and a public pool area with lounges, private cabanas and a “swim-up” bar. There were televisions and monitors everywhere, and really big multi-screens by the pool and in the gathering and game areas. And there were a ton of people having fun at midday on Thursday! The Golf Area has private driving areas for rent, with computer monitoring, that tracks your ball and gives you distance, replay, and other fun golf info. And of course there is plenty of food and beverage service available everywhere.
Just mind the warning signs and watch for errant golf balls and clubs!

And then back across the street to the resort.
Our friends moved their stuff to the Presidential Suite with a Private Veranda and we hung out there and waited for them to get settled in.

We made a run to the local market and picked up provision for the week. And then later we went back across the street to TopGolf for a late dinner.

FRIDAY at the Wyndham

Good morning! Cabana Time!

Friday, Saturday and Sunday began the same way each day: Tiki drinks for brunch! And some kind of food from the resort kitchen, along with snacks we brought from the room.

The cabana was equipped with a nice television and a noisy ceiling fan, and the public smoking area was right next door and there was a public cabana in that area. Most of the pool cabanas were positioned in the sun, and must have been really hot inside, while our cabana was on the other side and in the shade set back but facing the adult pool area.

 

Dinner time on Friday, and we had a meeting in the Presidential Suite to decide where to go to eat. There are many choices, so the group reviewed them, and eventually decided to go to Burger Bar (inside the Luxor Hotel, which we didn’t know at the time).

NOTE: Everything we did took a long time to get it together and actually do it. It wasn’t a problem, and we resolved to just ride along and see what happens (most of the time).

And then it started raining. A real Desert Storm! And a wet Friday night.
One of our new friends was the non-drinking designated driver, and he was a cool dude. But his driving was not cool. And it was dark and wet and it took a long time to get there. And then we toured the parking lot, for a long time, before finally parking.

We made our way into the Luxor and found the Burger Bar. Basically a $20 hamburger without anything else, so we decided to go spend our money at The Peppermill instead.

And so, after another wild ride in the rain around Las Vegas, we arrived for Dinner and Drinks at The Peppermill Restaurant and Lounge!

We had dinner and tiki drinks in the restaurant and then went into the lounge and had more drinks. The rain was really coming down and we were in no hurry to leave, so we rode out the storm in the lounge and met some fun new people.

A good time was had by all! We enjoyed our dinner and drinks at The Peppermill. Frank had a big Scorpion drink (in a glass, not a bowl) and the rest of us had a few different drinks from their cocktail menu too.

One more drive around Vegas in the rain and back to the resort. We survived! We returned to the Presidential Suite and then back to our suite in the other tower. We decided to take a hot bath and then sleep in the next day.

SATURDAY at the Wyndham and TopGolf

Cabana Time! Basically the same routine as Friday: tiki drinks, food, people hanging out and new friends stopping by until it was time to get it together and head over to TopGolf for the big shindig!

The party was a lot of fun, we got out drink on, and there was too much food! We ended up taking a lot of it back to the resort afterwards. There was golfing (unlimited balls, or something like that) and swimming too. The pictures are just a sample before it got crazy wild.

And so we returned to the resort and hung out until it got dark. We decided our next destination would be (more) Tropical Cocktails at Frankie’s Tiki Room!

After the wild road trip on Friday night, we decided we would drive to Frankie’s and meet the crew there. We cruised past The Strip and downtown to the bar.

We enjoyed a Mai Tai and then there was a lot of conversation and more drinks. We moved around from our table in the cabana to a seat at the bar. Lots of kitsch and weird decor to see, even in the dark. Eventually, they decided to return to the resort and we decided to go back to The Strip and have some Las Vegas fun.

The Wynn is a beautiful property! And it was crowded, which was nice. We played a little and wandered around taking in the different areas of the casino and environs. We had some luck and cashed out and drove back to the resort and went to bed.

SUNDAY (Mother’s Day) morning after waking up and getting ready, we walked over to the Presidential Suite for Breakfast/Brunch and more Cabana Time! It was a leisurely day of drinking and hanging out. There may have been an afternoon nap involved.

So we were volunteered to cook and we grilled some steaks for dinner at 9:30pm on Sunday at the community BBQ Grills. There’s a curfew for cooking at 10pm, so we had to be quick! We took them upstairs and enjoyed a great meal on the private veranda (and of course, there were more cocktails).

Then we went on a mission to The “Welcome to Fabulous Las Vegas Nevada” Sign!
It was designed by Nevada-born graphic designer Betty Willis (1923-2015) in 1959.

“The rounded diamond shape of the sign was inspired by the Goodyear logo and the idea for the starburst came from the one in Disneyland’s emblem, which to her meant a happy destination. The seven silver dollars were a symbol of good luck for visitors entering the world’s gambling capital. (Betty) Willis’s design was never trademarked.”

The sign was built by a small local company Western Electric Displays Inc, aka Western Neon. Western Neon was bought by YESCO (Young Electric Sign Company) and they have maintained the sign ever since. The original sign has been rebuilt, restored, and recognized as a cultural and historic landmark for the City of Las Vegas over the years.

Safe and legal public access to the sign was finally made possible in 2008, when parking spaces and a pedestrian walkway were finally constructed. Clark County and the Nevada State Historic Preservation Office had the sign listed on the National Register of Historic Places in 2009.

NOTE: It was “Helldorado Days” a big holiday in the State of Nevada. There was a parade on Saturday and the Rodeo and other events were happening all weekend in downtown Las Vegas and on Fremont Street. So, we didn’t go there.

Old Vegas! Glitter Gulch!

We returned to the resort and stayed up until MONDAY morning!
“It’s HOT in the Hot Tub!” 
And sometime before dawn we hit the Jacuzzi and Pool! (the pool and jacuzzi at Tower 3 are open 24 hours) It was very Early AM, at Tower 3, after it was cleaned, before the crowd and we were almost alone.

We had stayed up all night and after our adventures we finally decided to try out the 24 hour pool and jacuzzi in our Tower. The pool area was empty except for one couple, so we waited until they were out of the water and then we moved in. We spent about a half hour enjoying the warm, bubbly spa, and swam in the cool pool until the calm was interrupted by two small children and their mother….. as we left the pool area at 6am the mother was screaming at the children in the shallow end of the pool, “Get over here dammit, you pulled this sh*t all yesterday, I’m not gonna have it today!”
