Professional Cooking Tips! (ripped from the Interweb)

“To be a good cook you have to have a love of the good,
a love of hard work, and a love of creating.”
– Julia Child

And so, here are some great professional cooking tips and tricks
that we have collected from the interweb. We love to cook!
NOTE: We learned at an early age. We had a cooking class in junior high.
We chose apartment-style living at UCSC (with a kitchen so we
could cook for ourself) instead of dormitory living and “dining-hall” food.
We are not a professional chef, but some of our cooking is pro quality.

And away we go….

ALWAYS WASH YOUR HANDS! (and wash them frequently while cooking)
CLEAN AND SANITIZE YOURSELF, YOUR KITCHEN, AND YOUR FOOD!
Learn about kitchen safety/sanitation and safe food storage and preparation.

Drink Coffee. Drink Water. (stay awake and alert, and always stay well hydrated)

Prevent the cutting board from slipping – place a wet paper towel underneath it.

ALWAYS USE A SHARP KNIFE!
Sharpen your knives before, clean your knives after.
Use a vegetable peeler for ultra-thin cuts and shaving.
Learn how to hold the knife properly!
Learn the proper knife technique for the type of food you are cutting!
(and there are great YouTube vids on “how to” cut up everything)

Heat your pans before cooking (so they are already HOT).
Preheat your oven for 20 minutes at temperature before cooking and baking.
Constant heat and proper temperature are necessary for professional cooking.

Baker’s Tip: Put a bowl of water inside the oven when baking.
The steam will help make a nice crispy bread crust.

do-land-olakes-indian-butter-boob-trick.w1456

Use eggs and butter at room temperature when making dough.
Take the eggs and butter out of the fridge the night before.

Caramelized sugar for baking.
Slightly frying the sugar will add a note of caramel to baked goods.
Heat sugar for one hour for a hint of caramel flavor,
or heat for up to five hours to create a deep and unique aroma and taste.

Try to eat healthy, well-balanced meals.
Add healthy fats, cut sodium, bump up your fiber,
and aim for a variety of colors on your plate.
(but never sacrifice good food for a bad “diet”)

Cook your aromatics first.
Cook onions with salt. Add salt to reduce the smell. It will also cook them faster.
Add onions while the food is cooking.
Onions need time to develop their sweet flavor profile,
so they are one of the first ingredients to add to the pan.
NOTE: Garlic burns easily and the taste will turn bitter, so don’t add it early.

Know when to add the herbs.
Add dried herbs while cooking to enable the flavor to infuse the dish.
Fresh herbs should be added after the food is done cooking.
Fresh herbs will turn bitter if overcooked.

Use both salt and acid when seasoning.
Add the salt to your dish while you cook,
not before (and taste frequently) to avoid over-salting.
Use sugar as a seasoning.
It counteracts sour taste and will add a pleasant and rich flavor.

“The more you know, the more you can create.
There’s no end to imagination in the kitchen.” – Julia Child

Add a dash of high-quality extra virgin olive oil to enhance your dish.
But don’t use olive oil in everything. Use pure vegetable oil for cooking.
Olive oil burns easily! It is not good for high-temp cooking and frying.

Brine your Meat! Brining makes for juicy meat.
Create a juicy texture and infuse rich flavor, and minimize
the chance of the meat drying out or being overcooked.

Marinate meat or fish in a plastic bag.
This ensures the meat or fish is coated evenly.
(also makes for an easy cleanup)

Sou Chan 1952

“Life, like a cookie jar, would soon be empty
if you continued to accept the good things it offers
and put in no good things in return.”
– Sou Chan (from The House of Chan) 1952

Cook steaks that are at room temperature and they will cook more evenly.
And not all cuts of meat take the same time to cook!
For quick cooking, choose tenderloins and steaks.
For longer and slower cooking, use a roast, brisket, or shoulder cut.

Cook steak without oil by placing it on its side when cooking.
Cooking meat on the side renders the fat and will add more flavor.
It will also create a nice crust for the edges.

Make burgers juicy by placing ice cubes in the middle of the patties.
Right before grilling, press a small piece of ice into the center of patty.
This prevents it from drying out while cooking.

Heat the saute pan to a high temperature before searing meat or fish.
Pre-heat your pan and Don’t crowd the food when searing.
High heat is needed for perfectly seared meat and fish.
Do not to crowd the pan because it will lose the high cooking heat.
Place fish in pan with the skin side down first.
The high temp will quickly sear the skin and prevent it from sticking.

Use mayonnaise on fish to get a nice tasty crust.
Paint a small amount of mayo onto the fish with a pastry brush
and then season with salt before grilling. This will make a nice golden crust.

Make scrambled eggs creamy by adding mayonnaise.
Just add a teaspoon of mayo, it won’t change the flavor of the eggs.

Anthony-Bourdain-quotes-18-e1602880813514

Use sour cream to make great pancakes.
Add 2 tablespoons of sour cream to the pancake mix.
It will make the pancakes tasty and fluffy.

Peel hard boiled eggs fast and easy!
Just add a little baking soda before you boil them.
You can also use vinegar.
Both ingredients get inside the eggshell, and will make them peel faster.

Use a large frying pan instead of a big pot when cooking pasta.
The wider area of the pan will heat the water faster.
Pick the right size pan for the amount of pasta being cooked.
Add a little olive oil and salt the pasta to taste after the water is boiling.
The salt will season the pasta.
The oil prevents the pasta from sticking and adds flavor.
Cook pasta in the sauce to finish.
The sauce will coat the noodles and they will absorb the flavor.
If the sauce is too thick, just add a little pasta water to create the thickness desired.

Dry boil potatoes before mashing.
After boiling, remove potatoes from water and place in a clean heated pan.
Make sure they don’t cook anymore. Once dry, mash them.

Make Roasted Garlic in the microwave.
Place a whole bulb of garlic in a small bowl with a little oil and water.
Wrap the bowl in plastic wrap before microwaving. Cook until the garlic is soft.

To cook a perfect egg, you will only need three things:
a thick-wall frying pan, a 1/2 tablespoon of butter, and an egg.
Cook for 4-5 minutes over a low heat. Don’t forget to add a pinch of salt.
Remember, eggs will continue to cook after being removed from the pan!

TIP: Use an egg slicer to cut and slice fruits.

How to Butcher a Kangaroo:

NOTE: Kangaroo meat is very lean and high in protein, essential B vitamins,
iron, zinc, omega-3 (an essential nutrient associated with fish),
and omega-6 fatty acids, and is very low in fat (only about 2%)
But the meat also has a high concentration of conjugated linoleic acid (CLA)
which has been associated with the build-up of arterial plaque,
and can lead to cardiovascular disease, heart attacks and strokes.
67232285_3182547408484770_8951960546475769856_o

Kangaroo was always eaten by the aboriginal Australians, and the
meaty tail, roasted in a pit of hot embers, is considered a delicacy down under.

Kangaroo Meat is illegal in the state of California!

Fried Rice with Minced Beef

Ingredients:
1/2 pound minced beef
iceberg lettuce, shredded
2 eggs, lightly beaten
2 spring onions, finely chopped
2 bowls white rice, preferably leftover and reheated
2 tsp light soy sauce
salt, to taste
sugar, to taste

Marinade:
1 Tbsp light soy sauce
1 tsp cornflour
1/4 tsp chicken powder
2/3 tsp sugar
1 tsp water
1/2 tsp vegetable oil
1/2 tsp shaoxing wine
a pinch of pepper

Method:
Marinate minced beef with marinade for 15 minutes.
Heat oil over medium. Cook beef until 80% done. Set aside.
Add some oil again. Stir in beaten egg. Stir constantly until 60% done. Add rice, preferably reheated beforehand as it’d shorter the cooking time. Quickly stir fry evenly. Sprinkle salt and sugar to taste. When the rice is really hot thoroughly, add light soy sauce.
Toss in beef. Continue to cook and combine well. Add shredded lettuce and spring onion until softens. If you’d like to taste the crunchy veggie, then don’t fry too long. Serve hot.

Combination Fried Rice:
First, when it comes to fry rice, we have to use leftover rice because you don’t want any soggy rice. Mixing with all the other vegetables and meat, the rice would be just right, not so dry or soggy.
Second, use as many favorite ingredients as you like. There’s no only one rule to combine ingredients for fried rice. So, be creative and enjoy whatever you like.
Third, the right order is to pan fry eggs, then followed by rice. Many people make the mistake to put in rice first, then pour in whisked eggs. This would make the rice soggy and mushy by absorbing the egg mixture.
Last but not least, don’t stir fry all ingredients with rice in the first place. You have to sauté the meat and vegetables separately. Then combine with the fried rice when it’s nearly done. Simple and easy

Ingredients :
3 bowls leftover rice
1 onion
1 sausage (I used Continental Frankfurt this time)
1 slice ham
6 mushrooms
1/2 cup green peas
3 eggs, whisked

Seasoning:
1 tablespoon light soy sauce
A pinch of black pepper, to your taste
salt, to your taste
sugar, to your taste

Method:
Blanch green peas in boiling water for 2 to 3 minutes. Drain and set aside.
Cut onion, sausage and ham into small cubes. Slice mushrooms.
Heat 2 tablespoons of cooking oil and sauté onion on medium-heat pan, add in mushrooms until tender. Put in green peas and sauté for 2 minutes. Set aside.
Heat pan on medium heat, sauté sausage and ham until light brown. Dish up.
Clean the pan with a piece of kitchen towel. Add 2 tablespoons of oil, pour in whisked eggs. When the egg mixture is half-way cooked through, add in leftover rice. Stir well for about 10 minutes on high heat. When all rice is evenly heated up and mixed well with the eggs, add in onion, green peas and mix well. At last, add the sausage and ham. While stirring all ingredients together, generously sprinkle salt, sugar and black pepper. Drizzle the soy sauce all around the rice and toss. Taste it by yourself. When you’re satisfied, it’s done.

Tips:
You can use whatever greens you like, for example capsicum, celery. Other meat, like chicken, shrimp, beef or BBQ pork can be good choice too.
If you preheat the chilled leftover rice in a microwave beforehand, it would shorten the cooking time. Save your energy~
Enjoy your fried rice!

Candied Orange Peel
Strips of orange peel cooked in sugar syrup until they are soft and chewy.
They can be sugar coated or dipped in chocolate for extra fun.

Ingredients:
3 Oranges – navel or Valencia
2-1/4 Cups Sugar (granulated)
1-1/8 Water
Sugar for coating and/or Chocolate for dipping (optional)

Directions:
Prep and Blanche the Peel:
Rinse  and clean three navel or Valencia oranges.
Cut the top and bottom off each orange. Score the skin into quarters.
Remove the skin (both peel and pith). Cut into strips about ¼” wide.
(eat or save the peeled oranges for other use)
In a medium saucepan, place the strips of peel and cover with cold water.
Blanch the peels: Bring the water to a boil. When the water boils, drain the water from the orange peel strips. Rinse in fresh cold water. Repeat at least two more times.
Blanching removes any bitter flavor in the orange peel. (TIP: Blanch the peels 4-5 times).
Drain the water and place the peels in a bowl.

Sugar Syrup:
Use the same saucepan, and whisk together 2-¼ cups sugar and 1-⅛ cups water.
Bring the mixture to a simmer over a low heat.
Cook 8-9 minutes at a constant simmer, adjust the heat, and make sure it doesn’t boil.
Add the orange peel. Cook about 45 minutes to 1 hour on medium-low heat, until the white pith is translucent (not white), adjust heat as needed – maintain the simmer, keep from boiling.
Swirl the pan occasionally to make sure that all of the peels get covered with syrup.
DO NOT STIR, this will cause crystallation.
Drain the cooked syrup from the orange peels – (set aside and save for another recipe).
Toss the peels in a bowl of sugar to coat, or dip in melted chocolate and let set. (optional),
Transfer to a drying rack. When they are dry, store them in an airtight container.

Bon Appetit!

It’s an exclamation!

A salutation for someone about to eat!

It means GOOD APPETITE in French.

ENJOY YOUR MEAL!

Listen and learn how to say Bon Appétit correctly:

NOTE: you shouldn’t be wishing guests “Bon Appétit”…..
the French phrase is actually highly impolite.

Merci! (Thank you in French) Bon Appetit!

CV! Part 175 – SUMMERTIME! (Mon-Tues-Wed-Thurs)

205263124_10225448143614333_8939321973284966572_n

Summer 2021 in Northern Hemisphere began on Sunday, June 20.,
and runs from the June Solstice to the Vernal (Fall) Equinox on September 22.
June, July, and August (and now September) are the HOT months of the year.
The days are longer and the nights are shorter (and warmer).

Monday, June 21, 2021 – It’s SUMMERTIME!
“When all else fails, take a vacation.” – Betty Williams

2:30am: Monday! We just woke up from a short nap….

7:25am: We woke up about an hour ago. We got the newspapers.
We took the dogs outside, we fed the dogs, and we took the dogs outside again.
We made an iced espresso. Drink Coffee. Drink Water.
Now we are starting our day in the Home Office.

11:30am: We went back to bed, woke up and took the dogs outside.
We ate a cold slice of leftover pizza. Then we went back to bed.
We just woke up and got the mail. Feeling’ “dazed and confused” for a bit.

2:35pm: We drank an iced espresso. We took the dogs outside.
It’s a beautiful, sunny, HOT, and very bright day.
And now we’re chillin’ in the Home Office again.

3:25pm: We just took the dogs outside again.

Screen Shot 2021-06-22 at 20.59.12

2:55am Tuesday: Recapping Monday evening and night.
There was a long pursuit and it ended in a standoff. in Burbank.
AUDI builds a great car if you want to run from the cops.
Screen Shot 2021-06-21 at 20.35.37

The SWAT team was called and they gassed the guy out of the car and into custody.
We took the dogs outside. We fed the dogs. We took the dogs outside.

We finally made some food. We were thinking tacos, but we made a burrito.
On The Menu: Tri-tip steak burrito with fresh guacamole and salsa verde
and a Jumex mango nectar to drink
: 202669256_4871321342894393_930636220028544226_n

And we fell asleep with the dogs and woke up a little before 3:00am on Tuesday.
We took the dogs outside and then put them back to bed in the bedroom.

Mercury retrograde ends today!

  • National Chocolate Eclair Day
  • National Onion Rings Day
  • National Kissing Day
  • National HVAC Tech Day

“Shall I compare thee to a Summer’s day?
Thou art more lovely and more temperate.” – William Shakespeare

3:10am: We’re awake again.

7:00am: And we are awake again. We were up for a couple hours in-between.
Okay then, GOOD MORNING. It’s f*ckin’ Tuesday. DO NOT TRAVELTUESDAY!
We haven’t had our coffee yet and we don’t feel like we slept.

“A vacation is having nothing to do and all day to do it.” – Robert Orben

Did everyone go to Las Vegas this weekend? No, okey where did you go?
TOO MANY PEOPLE ARE TRAVELING. And THERE IS NO LONGER ANY TESTING!
Mask are still required in when traveling, but not required at the destination? WTF?
THERE ARE STILL A LOT OF PEOPLE WHO ARE NOT FULLY VACCINATED!
The CoronaVirus COVID-19 Delta Variant is becoming the dominant virus strain…..
and it’s more contagious and deadly. DO NOT RELY ON THE “HONOR SYSTEM”
(and they aren’t even talking about the new virus strain from Vietnam yet)

Screen Shot 2021-05-08 at 22.10.08

8:25am: We still haven’t had coffee. And we didn’t eat yet.
We got the newspapers.
We took the dogs outside. We fed the dogs. We took the dogs outside.
We had the dogs in the Home Office. We took the dogs outside.
Now they’re in the bedroom. And Choreboy is here to do some stuff.

11:45am: Well Choreboy did.a little vacuuming…. and not much more.
We drank an iced espresso. Drink Coffee. Drink Water.
We got the mail. We took the dogs outside. It’s a beautiful day.
And now we’re back in the Home Office.

1:35pm: We took a short (unintended) nap with the dogs.

3:20pm: So, we are still chilling’ in the Home Office with the dogs.
And they are just sleeping.
We ate some peanut M&Ms, but now it’s time for lunch.

4:10pm:
On The Mneu: Leftover pizza and an iced espresso for lunch
187558563_4778113578881837_4965582852574762591_n

6:40pm:
We took the dogs outside. We fed the dogs. We took the dogs outside.

Recapping Tuesday night: nothing happened. We watched TV and surfed the interweb.

We binge-watched “Sons of Sam” on Netflix, about “the .44 Caliber Killer” David Berkowitz
and the failure of the NYPD to properly investigate the murders after he was caught.
It was interesting, but you have to be a True Crime fan to really enjoy it, we think.

And we’re not going to Burning Man (or That Other Thing in the Desert) this year.
FREE BURN? No, a lot of people on The Playa…. without structure. TOO MUCH CHAOS.
And probably too many people – now that the pandemic is no longer an issue.
FUCK YOUR PRETEND BURN! It will be better next year. Or two years ago….

It’s International Olympic Day!
On this day in 1894, the International Olympic Committee  (IOC) was founded in Paris. Followed by 126 years of bribes and questionable practices on the name of sports. The can’t cancel the Tokyo 2020 2021 Olympics or they face financial ruin, even in the middle of a deadly pandemic.

ETuxtaXXYAAVrNG1

The Glastonbury Festival, would normally be held this week. It is a five day party that takes place in Pilton, Somerset, in England . It is the largest music and performing arts festival in the world. And it is cancelled again in 2021 because of COVID-19. Attendance: was ~203,000 people in 2019.

1:15am: Nothing happened. We took the dogs outside a couple times.
We didn’t eat dinner…. and we also need to bake banana bread.
And now it’s Wednesday. Nothing happened Tuesday.

5:50am: We’ve been awake for 20 minutes.
We posted a new Blog Post> “CV! Part 174” (the one before this one)
Wednesday morning begins now.

wednesday

6:25am: Okay! We got the newspapers and made an iced espresso.
Drink Coffee. Drink Water. We took the dogs outside. We fed the dogs.
We took the dogs outside again. We did the dishes.
Now we’re chillin’ in the Home Office while we update this Blog Post.
We have to scoop the new poop (the joy of pet ownership!) we didn’t scoop,
and also do a little yard work before the gardener comes later today.
And we need to eat breakfast today, because we didn’t have dinner last night…..

but first a little “morning news”., if you can call it that.
Traffic. Okay. We are not going anywhere today….again. StayTheF*ckHome!
10 Freeway is CLOSED near Fontana, California after a Big Rig Pursuit!
It started at 1:00am, and ended with the suspect killed by the Highway Patrol.
FREE BRITNEY! Britney Spears is going to testify about her conservatorship.

And we gave up on the news….. it might rain, it’s going to be HOT later.
Kool and the Gang open the Hollywood Bowl season on 4th of July weekend!
Forty cows escaped yesterday from a slaughterhouse/meat packing plant
and they ended up stampeding through the streets of Pico Rivera late into the night.
The cops shot and killed at least one, and ONE IS STILL MISSING, we heard,
and it was fun to watch a bunch of fools try to lasso a cow on someone’s lawn.

1:45pm: We took the dogs outside. We got the mail. Then we took a nap.
We woke up and made lunch, because we still hadn’t eaten anything.
On The Menu: Toasted cheese sandwich, dill pickle, carrot & celery sticks,
strawberries, raspberries, and a peach, with an iced espresso to drink

3:00pm: We took the dogs outside. We scooped the poop. The gardener came.

4:50pm: We waited for the gardener to finish, and then we took the dogs outside.

11:40pm: Recapping Wednesday.
We took the dogs outside. We fed the dogs. We took the dogs outside.
We watched the new episode of “I’ll Be Gone In The Dark” on HBO.
WE SHAVED OUR BEARD! No more “pandemic beard”…. YES, it just happened.
MIDNIGHT BAKING! We baked two loaves of banana bread.
Trying to bake it all day, finally done at 11:30pm.

On The Menu: Banana Bread x2 (YUM! YUM!)
205385742_4877306695629191_6309354696604313710_n
Time for dinner, but I just baked two loaves of banana bread,
and it’s really really good.
And the whole house smells like hot fresh banana bread.
So, banana bread for dinner at midnight.

We prepped the dogs’ breakfast. We took the dogs outside. We fed the dogs.

Time to get a new one….

11:25am: We are chillin’ in the Home Office with the dogs.
The housekeeper is here. We gave her Monday off., so there’s stuff for her to do.
We made another iced espresso and we got the mail. We ate a slice of banana bread.

June 11th is National German Chocolate Cake Day!

June 11th is National German Chocolate Cake Day!

German-Chocolate-Cake-LR-04-square-Culinary-Hill

It’s NOT from Germany, it’s 100% American!
In 1852, American Samuel German created a dark baking chocolate (with a higher sugar content than previous baking chocolate) for the Baker Chocolate Company.
Baker’s “German’s Sweet Chocolate’s” brand was named for him.
In 1957, “German’s Chocolate Cake” recipe was published in the Dallas Morning Star as the Recipe of the Day created by Mrs. George Clay, using Baker’s German’s Sweet Chocolate.

The company was originally named Walter Baker & Company in 1780.
Baker’s Chocolate was owned by the Baker family for 115 years until 1895.
Baker’s Chocolate Company was bought by the Forbes Syndicate in 1896 and sold to the Postum Cereal Company in 1927. Postum changed their name to General Foods, which was acquired by Kraft Foods in 1989. On March 25, 2015, Kraft announced its merger with Heinz. Baker’s Chocolate is now owned by Kraft Heinz, the fifth largest food company in the world.  Their products include a variety of bulk chocolates (including white and unsweetened) and sweetened coconut flakes.

800px-BakersCocoa

German Chocolate Cake
(with coconut pecan and chocolate frosting)

Ingredients:

Chocolate Cake:
2 cups granulated sugar
1-3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 large eggs
1 cup buttermilk
1/2 cup oil (vegetable or canola oil)
2 teaspoons vanilla extract
1 cup boiling water

Coconut Frosting:
1/2 cup light brown sugar
1/2 cup granulated sugar
1/2 cup butter
large egg yolks
3/4 cup evaporated milk
1 Tablespoon vanilla extract
1 cup chopped pecans
1 cup shredded sweetened coconut

Chocolate Frosting:
1/2 cup butter
2/3 cup unsweetened cocoa powder
3 cups powdered sugar
1/3 cup evaporated milk
1 teaspoon vanilla extract

Instructions:

Chocolate cake:
Combine sugar, flour, cocoa, baking powder, baking soda, and salt.
Combine eggs, buttermilk, oil, and vanilla.
Mix dry and wet ingredients together and stir in the boiling water. (will be very thin)
Pour batter into greased 8 or 9-inch round baking pans
(optional: use a round piece of wax or parchment paper for bottom of pan)
TIP: Use room temperature ingredients.
Run warm water over the eggs to bring them to room temperature.
Warm the buttermilk for just a few seconds. It makes a difference in the chemistry.
When baking at high altitude add 3 more tablespoons of flour.

Pre-Heat Oven and Bake at 375°F
Bake for 25 – 35 minutes (depending on cake pan size = a 9” pan takes less time)
Insert a toothpick in the center to test: the cake is done when it comes out clean.
Cool the cakes 5 minutes in the pans and then invert onto wire rack to finish cooling.

German Chocolate Frosting:
Combine brown sugar, granulated sugar, butter, egg yolks, and evaporated milk
in a saucepan and bring to a low boil over a medium heat.
Stir constantly until thick.
Remove from heat, stir in vanilla, nuts and coconut.
Cool completely before spreading it on the cake.

Chocolate Frosting:
Melt butter and stir in cocoa powder,
Add powdered sugar and milk slowly, and beat the mixture to a consistency that will spread.
Add in a small amount of milk or a little extra powder, if needed to thin or thicken the frosting.
Stir in the vanilla.

Assembly:
Place a cake round on a plate.
Spread a thin layer of chocolate frosting on the the cake.
Spoon half of the coconut frosting on top, and spread a smooth layer.
Leave ~1/2 inch between filling and edge of cake.
Place the second cake round on top.
Spread the chocolate frosting over the entire cake (top and sides).
Spoon and spread the remaining coconut frosting on top of the cake.

Decorate:
Use a piping bag and special tips to create the swirls on top of this cake.

Make Ahead:
Both frostings (coconut and chocolate) can be made ahead and refrigerated. Coconut frosting will keep 1-2 weeks (depends on the ingredients used) and Chocolate frosting will keep 2-3 weeks. Remove from fridge an hour before frosting the cake, and spread at room temperature.

Freeze and Store:
Bake the cake layers, allow them to cool completely.
Wrap separately in plastic wrap and then pace each one in a ziplock freezer bag.
Freeze for up to three months. TIP: Frost the cake when frozen, it’s much easier to frost!
The assembled cake can be frozen. Cover it well and it will keep for 2-3 months (slice the cake, wrap each slice in plastic wrap, and store in a freezer-safe container).
Defrost and bring to room temperature before serving.

Dixie’s Orange Bread!

Good Morning! Testing this Orange Bread recipe for a Facebook group.
It really helps if you have an ancient California orange tree with ripe fruit ready!

Good Morning! Fresh California Oranges!

We seeded and juiced two oranges, then cut the peel/rind from one. Outer peel and just a little inside peel/rind. We cut it into thin strips and then chopped it fine before using it. The rind cooks off and leaves little flecks of the orange peel in the bread.

It’s a good recipe, but it needs a little tweaking. We used 1/2 cup white sugar and 1/2 brown sugar this time. And we are going to try melting the butter, and adding a teaspoon of baking soda and a dash of vanilla next time.

Fresh Baked Orange Bread! Serve Warm with Butter

UPDATED Friday, March 15, 2019:
We did some Friday morning baking and made Orange Bread Take 2. As we mentioned above, we tweaked the recipe this time. Changes: one teaspoon baking soda, one teaspoon baking powder, added one teaspoon vanilla extract, melted the butter first, and used 1/2 cup fresh OJ and 1/4 cup cran-raspberry juice. Baked it for only 50 mins. And it came out much better!

1-1/2 Cups Flour
1/2 Cup Sugar
1/2 Tsp Salt
1 Tbsp Baking Powder

2 Eggs (beaten)
3 Tbsp Butter (melted)
1/3 Cup Vegetable Oil
1-1/4 Cup Milk

Optional: Add 1/4 Cup of Honey to the batter mix

Combine dry ingredients in large bowl.
Combine wet ingredients in medium bowl.
Add wet ingredients to dry ingredients and mix well

Preheat oven to 350 degrees.
Grease muffin pan and/or baking dish with more vegetable oil
Use a ~1/4 cup of batter for each muffin (fill each ~2/3 full)
Bake for ~18-20 mins or until they pass the toothpick test
Let cool and enjoy.

NOTE: This is basically the recipe on the Corn Meal box, so make adjustments for taste, time and temperature as necessary. We also like to add stuff before baking.
And the pictures show the product of a Doubled Recipe, so there will be fewer muffins.

Cornbread with BACON, cheese and jalapeño!

6 strips of Bacon (cooked and diced into very small pieces)
2/3 small block Colby Jack Cheese (diced into very small pieces)
1/2 small can of Diced Jalapeños (diced again into very small pieces)

Add Bacon, cheese and jalapeño to the batter mix and bake!
Adjust baking time as necessary, usually a little longer.

TIP: Bake in advance and freeze.
Let muffins cool completely and FREEZE them.
Then thaw them out and warm them before serving on the day of the party.

Have a Happy Turkey Day!

Ladyfingers Recipe for the Feast of St. Stephen and to celebrate Boxing Day!

LADYFINGERS RECIPE
(from “The Joy of Cooking”)

dsc2541
*for the Feast of St. Stephen and to celebrate Boxing Day*
Makes about 30 Small Cakes

“Saint Stephen with a rose
In and out of the garden he goes
Country garland in the wind and the rain
Wherever he goes the people all complain”

Preheat oven to 375 degrees.
Have ingredients at about 75 degrees.

Sift: 1/3 cup confectioners’ sugar
Sift before measuring: 1/3 cup cake flour and Resift 3 times!

1 whole egg
2 egg yolks
Beat until thick and lemon colored

2 egg whites
Whip until stiff, but not dry

Add and Fold the sifted sugar gradually into the whipped egg whites.
Beat the mixture until it thickens again.
Add and Fold in the egg yolk mixture and:
Add 1/4 teaspoon vanilla
Add and Fold in the sifted cake flour.

Shape the dough into oblongs with a paper tube
Place the dough on ungreased paper on a baking sheet;
or pour into greased ladyfinger molds.

Bake about 12 minutes at 375 degrees.

Remove the baking sheet from oven.
Immediately slide the parchment paper (with the ladyfingers) onto a wire rack.
Let cool for just a minute and remove them from the paper using a flat spatula or knife.
Cool completely on wire rack. (If they cool before removing them, they may stick and are hard to remove without breaking)

Ladyfingers are best fresh on the day they are made. To freeze, place in a plastic bag between layers of wax or parchment paper and store frozen for up to one month.

Ladyfingers are long, thin sponge cakes shaped like a large finger. Also known as Boudoir biscuits, sponge biscuits, sponge fingers, Naples biscuits, Savoy biscuits and biscuits la cuiller. They can be served with desserts like ice creams, custards and coffees, and they are used as a component in other desserts. Ladyfingers can be either soft and cakey or dry and crispy, but they always have a sponge-like texture. Their texture makes them a perfect choice for soaking up flavors, which is why they are frequently used in other desserts. Ladyfingers are usually plain with a neutral taste, but can be flavored with any extract, a bit of citrus zest, cocoa or spice to give them a flavor that stands out.

“Stephen prosper in his time
Well he may and he may decline
Did it matter? does it now?
Stephen would answer if he only knew how”

St. Stephen’s Day (Lá Fhéile Stiofáin) or the Day of the Wren (Lá an Dreoilín),
commemorates the life of St. Stephen, the first Christian martyr who was stoned to death. The second day of Christmas is also called Boxing Day, Wren Day or Constitution Day.

St. Stephen’s Feast Day (Il giorno di Santo Stefano) is celebrated as a public holiday in Italy, the United Kingdom, most of Europe and Canada on December 26.

Traditionally in the United Kingdom, Boxing Day was a holiday when employers gave money, food, tools, cloth, clothing or other valuable goods to their employees. In modern times, Boxing Day is a bank holiday and a day for sporting events and the start of post-Christmas sales. Some schools, businesses and organization are closed for the entire week between Christmas and New Years Day.

St. Wenceslaus was a Bohemian prince born in 903 AD and killed in 938 AD. He is the patron Saint of Czechoslovakia (now the Czech Republic) and his Feast is on September 28. The Christmas carol “Good King Wenceslaus” uses an old medieval melody about springtime, “Tempus adest florid” and mentions the Feast of St. Stephen:

“Good King Wenceslaus looked out on the Feast of Stephen,
When the snow lay round about, deep and crisp and even.
Brightly shone the moon that night, though the frost was cruel,
When a poor man came in sight, gathering winter fuel.”

St. Stephen was the first Deacon of the Christian church. A Deacon is supposed to care for the poor and St. Stephen’s Day is a day of charity for giving food, money and other items to servants, sevice workers, and the needy. St. Stephen is also the patron of stone masons, people with headaches and horses.
