4:40am: Monday morning. We are still awake. We might have tried to sleep.
We put in a load of laundry. We just published a Blog Post (Part 148).
On this day in 1861, the Civil War begins. Confederate General Beauregard attacked Fort Sumter in Charleston, South Carolina. And after thirty-four hours of artillery bombardment, the fort was surrendered.
On this day in 1981, NASA launched Columbia, the first space shuttle, into orbit.
Happy National Grilled Cheese Sandwich Day!
(for breakfast, and we already ate the other half)
7:15am: We took the dog outside. We fed the dog breakfast.
We took the dog outside again. We made a grilled cheese sandwich for breakfast.
We made an iced espresso. Drink coffee. Drink water.
We ate our sandwich and drank our espresso.
Now we’re chillin’ in the Home Office watching the morning “news”.
We just put our laundry in the dryer.
9:00am: We were outside in the backyard.
We just scooped a sh*tload of poop. Needed to be done.
Its a gray day this morning, the marine layer hasn’t burned off yet.
And we made another cup of espresso. We ate a banana.
National Colorado Day! – GO BRONCOS!
The Territory of Colorado was organized on February 28, 1861.
The Centennial State was admitted as the 38th state on August 1, 1876.
The population of Colorado is ~5,800,000 (as of 2020).
The state was named for the Colorado River.
Spanish explorers named the river Río Colorado (Red River).
Denver is the capital and most populous city in Colorado.

The southwest corner of Colorado is the Four Corners Monument.
Colorado, New Mexico, Arizona, and Utah meet,
the only place where four states meet in the US.
The Territory of Colorado’s boundaries are straight lines of latitude and longitude
as defined by United States Congress in 1861.
And that’s why it’s the shape of a rectangle, like Wyoming and Utah.
12:00 Noon – twelve o’clock – midday
3:10pm: The housekeeper came and cleaned the house today.
We isolated in the Home Office with the dog while she was here.
We took a little nap, and when we woke up, she was gone.
We took the dog outside. We played with the dog.
We drank an iced espresso.
And it’s a beautiful sunny day out now. Really nice day.

10:20pm:
We took the dog outside. We fed the dog. We took the dog outside.
We made another grilled cheese sandwich for supper.
We drank another iced espresso. We fell asleep for a couple hours.
We woke up and took the dog outside again.

Tuesday, April 13, 2021 – DO NOT TRAVELTUESDAY!

12:12am: Happy Tuesday! Just StayTheF*ckHome!
1:30am: We are tired and wide awake. Explain that.
Insomnia again? No, just our sleep schedule is non-existent.
We just made a cup of espresso, because why not?
DRINK COFFEE. DRINK WATER. STAY AWAKE ALL NIGHT.
4:45am: We made and ate some bacon. We drank another espresso.
We took the dog outside.
10:55am: We went to bed early AM, and woke up around 9:00am.
We took the dog out around 4:00am, and we took him out again when we woke up.
If you’re wondering where the other dogs are, they are on vacation for the week.
So the little boy went outside again, and got fed, and went outside again.
It was gray this morning, but it’s beautiful outside now. Warm and sunny again today.
We got the newspapers and the mail. We played with the dog.
We drank espresso and ate a toasted bagel with cream cheese.
We listened to music, we watched TV, we surfed the interweb.
And we updated this Blog Post…. which we are doing again right now.
“Don’t mess with Mister Booze”
4:05pm: We got dressed and ran some errands.
We went to the bank, the post office, and then we went shopping….
and we spent $9.00 on some toys at a small Thrift Shop.
First time we’ve been out “thrifting” in a year! (read our previous Blog Post from a year ago)
NOTE: When we went to the bank, it sucked. The guy in front of me in line WAS NOT wearing a mask, but he was wearing a face shield. Another couple was wearing their masks under their noses. And there wasn’t any social distancing between the windows, so we pointed it out to the teller, and she helped us at one window further over…. but it still sucked. And we had to wait inside. Still doesn’t feel safe, and some businesses still aren’t being safe and following state/federal guidelines. We didn’t encounter anyone at the Post Office checking our PO Box. But then we interacted with a few people (STRANGERS) at the four thrift stores/pawn shops we visited…. so weird. We need to find a great gift, and we really hate shopping online.

11:50pm: Recapping Tuesday evening and night.
We hung out with the dog. We took the dog outside. We fed the dog dinner.
We took the dog outside again. We made dinner. We ate dinner.
We fell asleep with the dog. And then we woke up around 11:30pm
On The Menu: Steak dinner. Thin cut steak with sauteed onions, baked potato with BBQ sauce, celery and carrot sticks, dill pickle, and cran-raspberry-orange juice to drink.
It’s National Peach Cobbler Day! Here’s a good recipe:
OLD FASHIONED SOUTHERN PEACH COBBLER – Makes 18 Servings
Prep time: 30 minutes – Cook time: 1 hour 10 minutes
Additional (chill) time: 30 minutes – Total: 2 hours 10 minutes
Searching for a peach cobbler recipe that will make a yummy dessert?
Made with fresh peaches and a homemade pie crust.
Worth the time – No shortcuts. Serve warm with vanilla ice cream.
- 2 ½ cups all-purpose flour
- 3 tablespoons granulated white sugar
- 1 teaspoon salt
- 1 egg
- 1 cup shortening
- ¼ cup cold water
- 3 pounds of fresh peaches (peeled, pitted and sliced)
- ¼ cup lemon juice
- ¾ cup orange juice
- ½ cup butter
- 2 cups granulated white sugar
- ½ teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1 tablespoon white sugar
- 1 tablespoon cornstarch
- 1 tablespoon butter (melted)
Directions:
-
Step 1: Use a medium or large bowl. Sift together flour, sugar, and salt. Work the shortening with a pastry blender until the consistency is coarse and crumbly.
Then in a small bowl, whisk together the egg and the cold water.
Sprinkle on the flour mixture, and mix in (with hands) to form the dough into a ball.
***Chill for 30 minutes*** -
Step 2: Preheat oven to 350 degrees F.
Roll out half of the dough into 1/8 inch thickness.
Use a 9×13 inch baking dish, cover bottom and halfway up sides with the dough.
Bake for 20 minutes, or until golden brown. -
Step 3: In a large saucepan, combine the peaches, lemon and orange juice.
Add 1/2 cup butter, and cook over medium-low heat until butter is melted.
In another mixing bowl, stir together 2 cups sugar, nutmeg, cinnamon, and cornstarch;
Mix into the peach mixture. Remove from the heat, and pour it into the baked crust. -
Step 4: Roll the remaining dough into a thickness of 1/4 inch.
Cut into half-inch-wide strips. Weave the strips into a lattice over the peach mixture.
Sprinkle with 1 tablespoon sugar, and drizzle with 1 tablespoon melted butter. -
Step 5: Bake 35 – 40 minutes, or until the top crust is golden brown.
